Sichuan Chili Pork Stir-fry with Broccoli is rich in flavor and high in protein. The pork tastes crispy outside and juicy inside. It is a perfect weeknight meal and the recipe is also simple to make.
In a large mixing bowl, mix together Pork, Ginger, Salt, Chinese 13 Spice Powder, Chinese Cooking Wine, Light Soy Sauce, Oyster Sauce, and Baking Soda. Set aside to marinate for 30 minutes.
Meanwhile, cook the Broccoli in a pot of boiling water for 2 minutes for a nice chewy texture. Drain and transfer the Broccoli to a large bowl. Set aside.
After 30 minutes, add in the Egg White and the Cornstarch to the Pork marinade. Mix well. Set aside.
In a wok, on medium-high heat, add 1 cup Vegetable Oil. Check the temperature of the Oil with a wooden chopstick. Once you see the bubbles coming up quickly at the edge of the chopstick, the oil is ready. Add the Pork pieces one at a time into the oil. Fry the pork in batches. First-fry for 3-4 minutes until cooked through and nicely golden. Drain and remove. Repeat the same process.
Second-fry all the Pork for another 1-2 minutes until the color turns golden brown. Drain and set aside.
Leave 2 tbsp of Oil in the wok. On medium heat, add in Ginger and Garlic. Stir for 10 seconds. Add in Dried Red Chilis and Sichuan Peppercorns. Stir for another 10 seconds. Then add in all the Pork pieces. Stir well.
Add the Sugar. Finally add in Broccoli and stir for 1-2 minutes. Then add in Green Onions and Roasted Sesame Seeds. Combine everything well.
Before serving, sprinkle some extra chopped Green Onions and roasted Sesame Seeds on top. Ready to enjoy!
