This Bacon and Egg Fried Rice is among the best fusion fried rice recipes. It has a great blend of Eastern and Western tastes. The fried rice is perfectly chewy and flavorful.
Cook the Jasmine Rice in a pot on medium high – medium – low for about 15 minutes until the rice is well cooked. Transfer the cooked rice to a bowl and set aside to let it cool down a bit. Then add 2 Eggs to the Rice and mix well.
In a small bowl, whisk the other 2 Eggs and set aside.
In a wok, add the Vegetable Oil and Butter, on medium-high heat. Then add the Bacon, and fry until the Bacon is crispy.
Add the Garlic. Stir for about 20 seconds until fragrant.
Add the cooked Jasmine Rice (covered with Eggs). Stir well with the Garlic, Butter and Bacon.
Push the Rice to the edge of the wok and add the whisked Eggs. Fry the Eggs until medium before combining with the Rice.
Add the Light Soy Sauce. Mix thoroughly. Then add the Sugar and Ground Black Pepper. Mix well again.
Turn off the heat. Add the Green Onions and stir gently.
Before serving, add some grated Parmesan Cheese for garnish. Ready to Enjoy!
