INGREDIENTS
SALT & PEPPER MIX
Sichuan Peppercorns – This is known for its numbing sensation. You can buy Sichuan Peppercorns in your local Asian grocery stores.
Black Peppercorns – This is commonly used in our daily cooking.
Sea Salt – I love SeaSalt flakes. You can also use other kind.
OTHER INGREDIENTS
Jasmine Rice – This is my favorite kind of rice. You can also use Basmati rice. I love to cook my rice the day I’m making the fried rice. If you have any leftover rice too, great!
Leftover Chicken – I normally have chicken breast leftover, which is what I use for this recipe. If you also have chicken leg meat leftover, it is even better.
Eggs – I use two eggs in this recipe. Eggs are must-have for a good and classic Chinese fried rice.
Light Soy Sauce – This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Sugar – You might be surprised how good is it to add sugar in the fried rice. Its caramelization just makes the fried rice extra delicious.
Vegetable Oil – I love using this for frying. I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Green Onions – or called Spring Onions. This is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Garlic – Garlic always adds a magic garlicky flavor.
HOW TO MAKE THIS SALT & PEPPER CHICKEN FRIED RICE RECIPE
1. Shred the Chicken: Use your hands to shred the leftover Chicken breast into pieces. Add to a bowl and set aside.
2. Prepare the Eggs: In a small bowl, whisk the Eggs well. Set aside.
3. Make the Salt & Pepper Mix: In a frying pan, toast Sichuan Peppercorns and Black Peppercorns on medium heat for about 1 minute until fragrant. Then use a Mortar and Pestle to grind the Peppercorns. Transfer to another bowl. Add in the Sea Salt. Mix well. Salt and Pepper Mix is ready. Set aside.
4. Cook the Eggs: In a wok, add the Vegetable Oil, on medium-high heat. Add in the Garlic. Stir for about 15 seconds until fragrant. Then add in the Eggs. Let sit for 20 seconds before scrambling the Eggs. Then add in the Chicken. Sprinkle some Salt & Pepper Mix. Stir well.
5. Assemble the dish: Then add in the leftover Jasmine Rice. Gently mix well. Add in Light Soy Sauce and Sugar. Mix well again. Add in chopped Green Onions and more Salt & Pepper mix. Combine thoroughly.
6. Ready to serve: Transfer to serving bowls. Garnish with more Green Onions and Salt & Pepper Mix as desired. Ready to enjoy!

– Remember to use your hands to shred the Chicken breast into pieces. Your hands are your best friends here. You can taste the difference between hand-shredded chicken and machine-shredded chicken. – If you have any leftover fried rice, you can easily warm it up in the microwave the next day and it will still taste amazing! – There will be some leftover Salt and Pepper Mix. Reserve it in a container and use it for other dishes as you desire. Do not waste it. Once you taste this spice you will use it often.

3cupscooked/leftover Jasmine Riceor 1 cup uncooked Jasmine Rice
6large Garlic Cloves, finely chopped
2tbspVegetable Oil
2large Eggs, whisked
2tbspLight Soy Sauce
1/2tspSugar
3Green Onions, finely chopped
Salt & Pepper Mix
1tbspSichuan Peppercorns
