This Black Pepper Shrimp Udon Noodles recipe is bold, comforting, and deeply satisfying — the kind of dish that instantly makes you feel at home. With juicy shrimp, chewy udon noodles, and that unmistakable black pepper aroma, it’s simple, flavorful, and perfect for any day of the week.

Black pepper udon has always been one of my childhood favorites. I grew up loving dishes that were simple yet full of character, and this one has stayed close to my heart over the years. Every time I make it, the smell of freshly cracked black pepper takes me right back — to warm kitchens, quick meals, and that comforting feeling of something familiar and loved.

SIMPLE INGREDIENTS, BIG FLAVOR

What makes this dish so special is how thoughtfully balanced it is. Black pepper is the star — fragrant, warming, and slightly spicy — but it’s supported by a savory, umami-rich sauce that adds depth and richness to every bite. Paired with tender shrimp and soft, chewy udon noodles, the flavors come together beautifully without feeling heavy or complicated.

The sauce clings to each strand of noodle, creating bold, comforting bites from start to finish. It’s the kind of flavor that feels familiar and satisfying — proof that simple cooking, when done right, can be incredibly delicious.

INGREDIENTS


Udon Noodles 
– This is one of the most popular noodles in Asian cooking. You can buy this from most Asian grocery stores. Your local stores will likely have this as well.
Tiger Shrimp – Always use large shrimp for satisfying bites. The shrimp should be peeled and deveined.
Lettuce – I like adding lettuce to my stir-fry noodles. You can also add Bok Choy or other green leaves vegetables.
Vegetable Oil – I like to use Rapeseed Oil. You can use Sunflower Oil too. Do not use Olive OIl.
Garlic – It provides a wonderful garlicky flavor
Green Onions – or called Spring Onions. I like to use this for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Salt & Black Pepper – The classic combo of seasoning that makes everything tastes better!

BLACK PEPPER SAUCE

Oyster Sauce – You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Dark Soy Sauce – This is normally used to add a deep color to the dish
Light Soy Sauce – This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Chinese Black Vinegar – or called 镇江香醋. This is made from fermented black sticky rice or regular glutinous rice. 
Black Pepper – The hero seasoning in the sauce.
Sesame Oil – It adds a unique flavor to the dish. We love to use this to add additional aroma to the dish in Asian cooking.
Cornstarch – Cornstarch is widely used in Asian cooking. It is also called corn flour.
Water & Chicken Bouillon – This helps make a chicken stock. You can also just use chicken stock.

HOW TO MAKE THIS BLACK PEPPER SHRIMP UDON

Prepare the Black Pepper Sauce – In a small bow, combine together Oyster Sauce, Dark Soy Sauce, Light Soy Sauce, Chinese Black Vinegar, Sesame Oil, Black Pepper, Cornstarch, Water, and Chicken Bouillon. Mix well and set aside.
Fry the Shrimp – In a frying pan, add in 1 tbsp of Vegetable Oil, on medium-high heat. Fry the Shrimp on both sides until nicely golden. Season with Salt & Black Pepper.
Cook the Udon Noodles – Boil a pot of water. Cook the Udon noodles for 1 minute until loosen up. Drain and set it aside.
Assemble the dish – In a wok, add in Vegetable Oil, on medium-high heat. Add in the Garlic, and stir for 15 seconds until fragrant. Then add in Udon noodles and the Black Pepper Sauce. Mix well and cook until the sauce has slightly thickened. Toss in Lettuce and cook until they are softened. Toss in the Shrimp and stir for another 30 seconds.
Ready to serve – Transfer to serving plates or bowls. Garnish with chopped Green Onions on top. Ready to enjoy!

HAINI’S TIPS

1. You can substitute Shrimp with Beef or Chicken if you prefer other meat options. For a vegetarian version, you can use Tofu instead.
2. If you don’t have Chicken Bouillon, you can just use Chicken stock. Replace Water and Chicken Bouillon with 1/4 cup of Chicken stock.
3. For the Greens, I use Lettuce here, you can also use Bok Choy or other green-leaf vegetables.
4. If Chinese Black Vinegar is not available, you can substitute with Balsamic Vinegar.

For a heartier meal, add a soft-boiled egg or extra vegetables like mushrooms or bok choy. This dish is best enjoyed immediately while the noodles are glossy, warm, and perfectly coated in that comforting black pepper sauce.

Ingredients
  

  • 2 packages of Udon noodles
  • 10 – 12 large Shrimp, peeled & deveined
  • 2 cups Lettuce, sliced
  • 2 tsp Vegetable Oil + 1 tbsp for frying
  • 4 Garlic Cloves, finely chopped
  • 1 Green Onions, finely chopped
  • Pinch of Salt
  • Pinch of Black Pepper

Black Pepper Sauce

  • 1 tbsp Oyster Sauce
  • 1 tbsp Dark Soy Sauce
  • 1/2 tbsp Light Soy Sauce
  • 1 tbsp Chinese Black Vinegar
  • 2 tsp Sesame Oil
  • 3/4 tsp Black Pepper
  • 1 tsp Cornstarch
  • 1/4 cup Water
  • 1/4 Chicken Bouillon

Instructions
