2Green Onions (separate the white, light green, and the dark green parts)
2small Garlic Cloves (optional)
1tskHvid eddike
1/2tskSalt (1/4 tsp + 1/4 tsp)

Prepare Tomatoes, Eggs, Green Onions, and Garlic in different bowls. Add 1/4 tsp Salt and White Vinegar into the Eggs. Mix well.
In a frying pan, add some Vegetable Oil on medium-high heat, fry the Eggs for approximately 1 minute (or less!) until fluffy. Remove and set aside.
In a wok, add some Vegetable Oil on medium-high heat. Add the Garlic and Green Onions and stir for about 10 seconds. Add the Tomatoes and stir some more.
Add the Water, then cover and simmer at medium heat for about 5 minutes until the Tomatoes are softened.
Add the Eggs and stir gently together. Add 1/4 tsp Salt and the Sugar to adjust the taste. Cover and cook on medium-high for another 2 minutes.
Garnish with the dark green parts of the Onions and serve.
Noter
Do not overcook the eggs! When frying, wait until the oil gets really hot, then add them in. Remove them quickly once they are soft and fluffy. The eggs will cook again when added to the tomatoes.
The sugar neutralizes the sourness and a little vinegar keeps the eggs’ good texture.
