1cupuncooked Jasmine Rice or 3 cups cooked Jasmine Rice
100gBacon, cut in small pieces
3tbspJapanese Kewpie Mayonnaise
2large Eggs
2tbspButter
5Garlic Cloves, finely chopped
1-2tbspLight Soy Sauce
3chopped Green Onions
pinches of Black Pepper
extra Green Onions for garnish
Instructions
Cook the Jasmine Rice on medium high – medium – low for about 15 minutes until the rice is well cooked. Transfer the cooked rice to a large bowl and set aside just to let it cool down slightly.
In a small bowl, whisk the Eggs well.
Mix the Mayonnaise with the cooked rice.
In a frying pan, add in the Butter, on medium-high heat. Once the Butter is melted, add in the Bacon. Cook the Bacon until lightly crispy for 3-4 minutes.
Add in the Garlic. Stir well with the Bacon for about 20 seconds until fragrant. Add in the Rice and stir for about 1 minute.
Move the Rice to one side of the pan and add the Eggs to the other side. Let sit for 30 seconds before scrambling the Eggs and mix through with Rice.
Then add in Light Soy Sauce and toss well. Add in Green Onions and mix well again. Give it a taste and add in pinches of Black Pepper. You can also season with some Sea Salt as desired.
Transfer to bowls. Garnish with some extra Green Onions on top. Ready to serve!

The secrect ingredient is Mayonnaise. To be precise, it is Japanese Kewpie Mayonnaise. You will make a more authentic Japanese fried rice with Kewpie Mayonnaise. However, if you can’t find it in your area, you can use other kind of Mayonnaise too. The taste might be a bit different but it is still amazingly delicious!
