Bang Bang Shrimp is absolutely a treat! Crispy fried shrimp is coated with a creamy, sweet, and spicy sauce. The taste is sensational. It is also quick and easy to make.
500g/ 17.6 oz Large Shrimp, peeled & deveined, tail shell on
1/2tspSalt
1/2tspWhite Pepper
1cupCornstarch
1Green Onion, finely chopped for garnish
Vegetable Oil for frying
Homemade Buttermilk
1/2cupWhole Milk
1/2tbspfreshly squeezed Lemon Juice
Bang Bang Sauce
1/2cupJapanese Kewpie Mayonnaise(you can substitute with regular mayonnaise)
3tbspThai Sweet Chili Sauce
2tbspSriracha Sauce
1tbspHoney
Instructions
In a large mixing bowl, add in the Whole Milk and freshly squeezed Lemon Juice. Let sit for 5 minutes. Homemade buttermilk is ready.
Then add in the Shrimp, Salt, and White Pepper. Mix well and set aside.
Make the Bang Bang Sauce. In another large mixing bowl, mix together Japanese Kewpie Mayonnaise, Thai Sweet Chili Sauce, Sriracha, and Honey. Set aside.
In a tray or bowl, add in the Cornstarch. Coat the Shrimp one at a time. Shake off extra starch.
In a wok, add in Vegetable Oil over medium heat. Use a wooden chopstick to check the temperature oil (180 C or 350 F). If you see small bubbles coming up, the oil is ready.
Add the Shrimp one at a time into the hot oil. Fry them in batches. Do not crow d the pan. Fry for 3-4 minutes until both sides are golden and cooked through. Drain on paper towels.
Place the fried Shrimp into the bowl of Bang Bang Sauce. Toss everything well until the Shrimp are evenly coated.
Transfer to a serving plate. Garnish with some chopped Green Onions on top. Serve immediately!

Notes
You should always use large Shrimp for satisfying bites. I like to leave the tail shell on for a nice shape.
For the buttermilk, you can normally buy it from the store if you are in the U.S. However, it is hard to find buttermilk here in Denmark. You can easily make this at home with simple ingredients.
If you can find the Japanese Kewpie Mayonnaise, I highly recommend you to use it. It just tastes so much better compared to the regular mayonnaise. But you can substitute this with the regular mayonnaise if Kewpie Mayonnaise is not an option for you.
You can adjust the amount of Sriracha Sauce depending on how much spiciness that you want.
