Instructions
In a bowl, mix together Kewpie Mayo, Condensed Milk, Honey, and Lemon Juice. Set aside.
In a non-stick frying pan, on medium heat, add in Brown Sugar and Water. Stirring constantly and bring to a simmer. Once the sugar syrup thickens, quickly add in Walnuts. Mix to coat evenly.
Remove from heat. Transfer Candied Walnuts one by one to parchment paper. Set aside.
In a mixing bowl, add the Shrimp, then season with Salt and White Pepper. Mix well.
In another large bowl, add in Egg Whites and whisk until foamy. Then add in Cornstarch and mix until you have a nice runny paste.
Add in the Shrimp and mix well until the Shrimp is well coated in batter.
In a frying pan, on medium-high heat, add in enough Vegetable Oil for the Shrimp to float. Use wooden chopstick to check the temperature of the oil. If you see bubbles coming up quickly at the edge of the chopstick, the oil is ready (180 C / 350 F).
Add the Shrimp one by one into the oil. Fry them in batches for 2-3 minutes until crispy and golden brown color. Do not overcrowd the pan. Drain excess oil on paper towel.
In a large mixing bowl, add in the crispy Shrimp, candied Walnuts, and the creamy honey sauce. Toss everything well until the Shrimp are evenly coated.
Transfer to a serving plate or bowl. Garnish with some chopped Green Onions on top. Ready to enjoy!
