Use one-day-old cooked Rice or cook the Rice during the day and set aside to cool down.
Use your hands to flake the Salmon into large chunks and add to a bowl. Set aside.
In another bowl, whisk the Eggs well.
In a wok, add the Vegetable Oil, on medium-high heat. Add in the Garlic. Stir for about 15 seconds until fragrant. Then pour in the Eggs. Let sit for 30 seconds. Then scramble and stir fry with the Garlic.
Add in the cooked Jasmine Rice. Combine well. Then add in the Salmon.
Add the Light Soy Sauce and Oyster Sauce. Stir well. Then add in the Black Pepper and Sugar. Continue to stir well.
Turn off the heat. Add in chopped Green Onions. Combine throughly.
Transfer to serving bowls. Garnish with extra Green Onions and Black Pepper. Ready to enjoy!

I use the store-bought Smoked Salmon with Black Pepper. You can also use fresh salmon fillets and pre-cook them before adding to the fried rice.
If you love a spicy version, instead of adding the Black Pepper, you can add 1 tbsp of Lao Gan Ma Crispy Chili Oil. The taste is great.
