400g/ 14 oz Beef - Sirloin or Tenderloin (Cut into slices)
20g/ 0.7 oz Ginger, minced
4Garlic Cloves, minced
1Green Bell Pepper
2Red Chilies
3Green Onions
One half of a large Onion
2tbspHoisin Sauce
1tbspOyster Sauce

1Egg White

The Beef Sauce
1tbspSeasoned Soy Sauce for Seafood
1tbspChinese Cooking Wine
1/4tspSalt
1/4tspGround Black Pepper
1tspCornstarch
Instructions
Cut the beef in thin slices and place into a large bowl. Clean the beef for 1-2 minutes (I use my hands) and then drain.
Marinate the beef in a big bowl. Add Salt, Ground Black Pepper, and Dark Soy Sauce. Use one hand to massage the beef in a circular direction for about 2 minutes until sticky. Add an Egg White, massage in a circle again.
Add the Cornstarch. Mix well, then add some Vegetable Oil and mix well again. Set aside the beef mixture.
Prepare Ginger, Garlic, Green Bell Pepper, Onion, Green Onions, and Red Chilies. Set aside.
Prepare the Beef Sauce. In a medium bowl, mix Seasoned Soy Sauce for Seafood, Chinese Cooking Wine, Salt, Ground Black Pepper, and Cornstarch together. Set aside.
Heat up the wok to medium high. Add a couple of tablespoons of Oil. Put in beef and fry for about 2 to 3 minutes, until the beef is around 70% cooked. Then set aside.
In the same wok on high, add 2 tablespoons of Oil. Add Ginger, Garlic, and Red Chilies. Stir-fry for about 10 seconds, then add Green Peppers and Onions, stirring well. Add the Hoisin Sauce and Oyster Sauce.
Add the beef, stir for a minute, and add the Beef Sauce. Keep stirring until the beef and the sauces are well coated. Serve while hot!
Notes
It's important to clean and massage the beef in the beginning as the beef will taste more tender.
Be sure to use some Vegetable Oil for marinating the beef to keep the beef from sticking to the wok while cooking.
Do not overcook the beef initially. Remove from wok when the color has just changed to brown.
If you cannot find Seasoned Soy Sauce for Seafood, you can just use regular Soy Sauce as substitution.
