Fusion noodles have been a part of my cooking DNA. I love the combination of different cuisines to create the best possible flavor. MISO
Miso means “fermented beans” in Japanese. This is a traditional ingredient in both Japanese and Chinese cuisines. Miso paste is made from fermented soybeans and grains, which contain tons of beneficial bacteria.
The Miso paste can be used in all sorts of dishes, including soups or broths, salad dressings, vegetables, stews, glazes and marinades. Miso is rich in vitamins and minerals, as well as probiotics. Miso Carbonara Noodles
Ingredients
- 2 packages Ramen Noodles
- 100 g / 3.5 oz Bacon, cut in small pieces
- 2 large Whole Eggs, room temperature
- 1 tbsp Miso paste
- 80 g Parmesan Cheese, grated
- 2 tbsp Extra Virgin Olive Oil
- 1/4 tsp Black Pepper
- 1/4 tsp Fine Salt
- some chopped Green Onions for garnish
- some Sesame Seeds for garnish
Instructions
- In a large mixing bowl, mix together Eggs, Parmesan Cheese, Miso Paste, Black Pepper, and Salt. Set aside.
- In a frying pan, add the Olive Oil, on medium-high heat. Add the Bacon. Cook the Bacon until crispy. Turn off the heat and sit on the stovetop.
- In a pot, cook the Ramen Noodles in boiling water for 1-2 minutes until just cooked but still a little firm. Drain the noodles and reserve some of the cooking water.
- Transfer the Ramen Noodles into the pan, on low heat. Coat well with the Bacon for 1-2 minutes.
- Add the Miso Egg mixture and toss well with the noodles. Keep the heat really low or off. Add some reserved cooking water to get to a nice consistency.
- Transfer to serving plates or bowls. Before serving, sprinkle extra Black Pepper, grated Parmesan Cheese, chopped Green Onions, and some Sesame Seeds for garnish. Serve right away!

Notes
- You can use ramen noodles of your choice. Or you can just use Spaghetti Noodles. Remember to cook the Spaghetti Noodles according to the package instruction.
- For the Miso paste, you can use either white or red miso paste.
- Remember not to overcook the Ramen Noodles as you want to keep the good texture.
- Reserve some cooking water and use it to adjust the creamy sauce to get to a nice consistency that you like.
