INGREDIENTS

Udon Noodles – This is one of the most popular noodles in Asian cooking. You can buy this from most Asian grocery stores. Your local stores will likely have this as well.
Smoked Salmon – I use Smoked Salmon with Black Pepper. It has an amazing flavor. You can easily find this in your local supermarkets.
Vegetable Oil – I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Eggs – I use two eggs in this recipe. Eggs just make the dish richer and more satisfying.
Lettuce – I like adding lettuce to my stir-fry noodles. You can also add Bok Choy or other green leaves vegetables.
Sesame Oil – It adds a unique flavor to the noodles and it helps keep the noodles in good texture.
Light Soy Sauce – This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Oyster Sauce – You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Chili Flakes – This adds a bit extra spicy tang. If you want to tune down the spiciness, you can skip this.
Black Pepper – It adds a bit of peppery flavor, which makes the noodles even more flavorful.
Green Onions – or called Spring Onions. I like to use this for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.

HOW TO MAKE THIS SALMON STIR FRY UDON NOODLES

Prepare the ingredients:  Use your hands to flake the Salmon into large chunks and add to a bowl. Set aside. In another bowl, whisk the Eggs well.
Cook the Udon Noodles: Boil a pot of water. Cook the Udon Noodles in boiling water for about 1 minute until loosened up. Transfer to a bowl. Add in Sesame Oil. Mix well and set aside.
Cook the Eggs: In a wok, add in Vegetable Oil on high heat, then add in Eggs. Let it sit for 20 seconds before scrambling the eggs.
Assemble the dish: Then add in Udon Noodles. Stir for a few seconds. Add in Lettuce and Green Onions. Continue to stir well. Then add in the Salmon. Next, add in Light Soy Sauce and Oyster Sauce. Combine thoroughly. Then add in Chili Flakes. Stir well again. Add in bunch of Black Pepper.
Ready to serve: Transfer to serving bowls. Sprinkle more Black Pepper on top. Ready to enjoy!

HAINI’S TIPS

1.  I use the store-bought Smoked Salmon with Black Pepper. You can also use fresh salmon fillets and pre-cook them before adding to the noodles.
2. Remember not to overcook the Udon noodles in boiling water, as the noodles will be cooked again during stir-fry.
3. You can add other vegetables of your choice for this stir-fried noodles, such as Bok Choy or Cabbage.

Ingredients
  

  • 200 g 7 oz smoked Salmon (store bought)
  • 2 packages of Udon noodles
  • 2 Eggs, large
  • 2 Green Onions, sliced
  • 1 cup Lettuce, sliced
  • 1 tsp Sesame Oil
  • 2 tbsp Vegetable Oil
  • 2 tbsp Light Soy Sauce
  • 2 tbsp Oyster Sauce
  • 1 tsp Chili Flakes
  • bunch of Black Pepper

Instructions
