This Salmon Stir-Fry Udon Noodles is a quick and flavorful dish made with tender salmon, chewy udon noodles, and crisp vegetables tossed in a rich, savory sauce. It’s comforting, nourishing, and ready in just 20 minutes — perfect for busy days when you want something wholesome and delicious!
Use your hands to flake the Salmon into large chunks and add to a bowl. Set aside.
In another bowl, whisk the Eggs well.
Boil a pot of water. Cook the Udon Noodles in boiling water for about 1 minute until loosened up. Transfer to a bowl. Add in Sesame Oil. Mix well and set aside.
In a wok, add in Vegetable Oil on high heat, then add in Eggs. Let it sit for 20 seconds before scrambling the eggs.
Then add in Udon Noodles. Stir for a few seconds. Add in Lettuce and Green Onions. Continue to stir well. Then add in the Salmon.
Next, add in Light Soy Sauce and Oyster Sauce. Combine thoroughly. Then add in Chili Flakes. Stir well again. Add in bunch of Black Pepper.
Transfer to serving bowls. Sprinkle more Black Pepper on top. Ready to enjoy!

Notes
I use the store-bought Smoked Salmon with Black Pepper. You can also use fresh salmon fillets and pre-cook them before adding to the noodles.
Remember not to overcook the Udon noodles in boiling water, as the noodles will be cooked again during stir-fry.
You can add other vegetables of your choice for this stir-fried noodles, such as Bok Choy or Cabbage.
