pinches of Salt
1tbspLight Soy Sauce
1tspOyster Sauce
Some fresh water
1/2tspDark Soy Sauce
1/2tspSugar
3tbspCornstarch Slurry - 1 tbsp Cornstarch with 1/4 cup (60 ml) water
Instructions
Cut the Tofu in 1.5 cm (1 inch) rectangular sizes, mince the Garlic, and cut the Green Onions in two different sizes.
Heat the Oil in a frying pan or wok to medium-high, be sure to add pinches of Salt, and fry the Tofu for about 5 minutes on one size.
Flip the Tofu over, be sure to add a few pinches of Salt, and fry another 5 minutes.
Remove the Tofu from the wok and set aside.
Reheat the wok to high, add 2 tbsp of Oil. Add minced Garlic, Soy Sauce, Oyster Sauce, Dark Soy Sauce, Sugar, and some fresh water, cook for about 10 seconds. Add the Tofu and mix well.
Add the Onions (reserving the green pieces for garnish) and Cornstarch Slurry into the Tofu mixture. Cook for 1 minute until coated well. Before serving, add the Green Onions for garnish.
Notes
Always add a small pinch of salt while frying the tofu. This simple step makes a huge difference in flavor and helps prevent the tofu from tasting plain.
If you enjoy spicy food, add red pepper flakes or a little cumin powder for extra heat and aroma.
Let the tofu fry undisturbed for a few minutes before flipping so it develops a crisp golden crust.
Serve the tofu fresh and hot for the best texture and flavor.
