Sichuan Cheese Pepper Hot Dog Noodles is a fantastic Italian and Chinese fusion! You will love both the unique flavors and textures. And it only takes 20 minutes to make.
On medium heat, toast the Black Peppercorns and Sichuan Peppercorns in a frying pan for 1-2 minutes until fragrant. Use a mortar and pestle to grind into find powder. Set aside.
In a frying pan, on medium-high heat, add in the Vegetable Oil. Fry the Hot Dog until cooked and crispy. Transfer to a bowl and set aside.
In another large frying pan, melt half the butter on medium heat. Add the minced Garlic and ground pepper mix. Cook for 1 minute. Turn off the heat and set aside.
Boil a pot of Water. Cook the Spaghetti in boiling salted water for 7-9 minutes until al dente according to the package instruction. Reserve 1 cup of the Noodle Cooking Water. Drain the noodles.
Reheat the pepper garlic mixture on medium heat. Add 1/2 cup Noodle Water to the frying pan and bring to a simmer. Add in the Spaghetti and 1/2 cup of grated Parmesan Cheese. Toss well until thickened slightly.
Add the remaining Butter, Parmesan Cheese, and the Hot Dog. Toss well again until the sauce is thickened. Add more Noodle Water if necessary to adjust to your preference.
Transfer to serving plates. Garnish with extra grated Parmesan Cheese and chopped Green Onions. You can also add more Black Pepper on top. Serve warm immediately.
