If you are a big fan of fusion food like me, you will love this Sichuan-style Cheese Pepper Hot Dog Noodles. The inspiration comes from the beloved Italian CACIO E PEPE – Cheese and Pepper. I have integrated both Italian and Chinese Sichuan flavors into this unique dish.

The combination of Cheese and Pepper is absolutely amazing! Hot Dog is a surprised addition to this dish. I can proudly say that this is one of my signature dishes that is enchanting and powerful. Sichuan style Cheese Pepper Hot Dog Noodle

HOW TO MAKE THIS CHEESE PEPPER HOT DOG NOODLES

1. Prepare the pepper mix – On medium heat, toast the Black Peppercorns and Sichuan Peppercorns in a frying pan for 1-2 minutes until fragrant. Use a mortar and pestle to grind into find powder. Set aside.
2. Fry the Hot Dog – In a frying pan, on medium-high heat, add in the Vegetable Oil. Fry the Hot Dog until cooked and crispy. Transfer to a bowl and set aside.
3. Cook the pepper mix – In another large frying pan, melt half the butter on medium heat. Add the minced Garlic and ground pepper mix. Cook for 1 minute. Turn off the heat and set aside.
4. Cook the Spaghetti – Boil a pot of Water. Cook the Spaghetti in boiling salted water for 7-9 minutes until al dente according to the package instruction. Reserve 1 cup of the Noodle Cooking Water. Drain the noodles.
5. Assemble the dish – Reheat the pepper garlic mixture on medium heat. Add 1/2 cup Noodle Water to the frying pan and bring to a simmer. Add in the Spaghetti and 1/2 cup of grated Parmesan Cheese. Toss well until thickened slightly. Add the remaining Butter, Parmesan Cheese, and the Hot Dog. Toss well again until the sauce is thickened. Add more Noodle Water if necessary to adjust to your preference.
6. Ready to serve – Transfer to serving plates. Garnish with extra grated Parmesan Cheese and chopped Green Onions. You can also add more Black Pepper on top. Serve warm immediately.

Haini’s Tips

Remember to always cook the Noodles in salted water for the best texture. You can substitute Spaghetti Noodles with Egg Noodles. You can adjust the consistency to your preference by adding the reserved Noodle Cooking Water. It is best to serve immediately while the dish is just made.

Ingredients

  • 200 g Spaghetti Noodles
  • 4 tbsp Unsalted Butter
  • 1 tsp Black Peppercorns
  • 1 tsp Sichuan Peppercorns
  • 1 medium Hot Dog, cut in slices
  • 1 tbsp Vegetable Oil
  • 2 tsp Salt
  • 1 cup grated Parmesan Cheese
  • 3 Garlic Cloves, minced
  • 1 cup reserved Noodle Water
  • chopped Green Onions for garnish
