Sauteed Tomatoes with Eggs is one of the most common and highly praised dishes in China. It is simple and easy to make. The combination of tomatoes and eggs provide rich nutrients to our diet. Just as importantly, it is so satisfyingly delicious and it adds a nice splash of color to any table!

With only a few simple steps, the dish is quickly ready to eat.

Tomatoes and Eggs

Tomatoes are low in calories and high in vitamins B and C. Eggs are rich in minerals, vitamins, and very high in protein. They both provide great health benefits and the combination of flavors always surprises your taste buds! Chinese cooks normally use the same number and approximately the same size tomatoes and eggs for this dish. In this recipe, I like to use 4 medium-size tomatoes and eggs. If the eggs or the tomatoes are miss-matched dramatically in size, you will need to adjust accordingly!

Green Onions and Garlic

Green onions are a beautiful and important addition and transform the finished dish into a “paint splash” of modernist art. I’m thinking Jackson Pollock or Bonnie Bravo (whose large watercolor adorns my happy kitchen. You can see it by clicking on my “About” section)! I usually add Garlic to fit my love for the combo of sweet, sour, salt, and spice!

Ingredients

  • 4 medium Tomatoes
  • 4 medium Eggs
  • 2 Green Onions (separate the white, light green, and the dark green parts)
  • 2 small Garlic Cloves (optional)
  • 1 tsp White Vinegar
  • 1/2 tsp Salt (1/4 tsp + 1/4 tsp)
  • 1 tsp Sugar
  • 1/4 cup / 60 ml Water

Instructions

  • Prepare Tomatoes, Eggs, Green Onions, and Garlic in different bowls. Add 1/4 tsp Salt and White Vinegar into the Eggs. Mix well.
  • In a frying pan, add some Vegetable Oil on medium-high heat, fry the Eggs for approximately 1 minute (or less!) until fluffy. Remove and set aside.

  • In a wok, add some Vegetable Oil on medium-high heat. Add the Garlic and Green Onions and stir for about 10 seconds. Add the Tomatoes and stir some more.
    Fry the tomatoes
  • Add the Water, then cover and simmer at medium heat for about 5 minutes until the Tomatoes are softened.
  • Add the Eggs and stir gently together. Add 1/4 tsp Salt and the Sugar to adjust the taste. Cover and cook on medium-high for another 2 minutes.
  • Garnish with the dark green parts of the Onions and serve.

Notes

  • Do not overcook the eggs! When frying, wait until the oil gets really hot, then add them in. Remove them quickly once they are soft and fluffy. The eggs will cook again when added to the tomatoes. 
  • The sugar neutralizes the sourness and a little vinegar keeps the eggs’ good texture.
