Fried Rice is always my go-to comfort food and it goes perfectly with the Salmon. This Salmon Fried Rice is not only super easy to make, it is healthy and delicious at the same time. And the recipe takes only 15 minutes to make!

SMOKED SALMON
I’ve used Smoked Salmon with Black Pepper in this recipe. You can easily find this kind of smoked salmon in the supermarkets. You are welcome to use fresh salmon fillets and pre-cook your salmon before adding to the fried rice. But I find that the Black Pepper Smoked Salmon has that amazing flavor which goes perfectly with the fried rice.
THE RICE
I use the leftover rice from the day before. You can also cook your rice during the day and let it cool down. Sometimes, I just cook my rice right before making the fried rice, which I have done in some of my other recipes. The result is great too!
INGREDIENTS
Jasmine Rice – I love using Jasmine Rice and I use leftover rice here. You can use other kind of white rice too.
Smoked Salmon – I use Smoked Salmon with Black Pepper. It has an amazing flavor. You can easily find this in your local supermarkets.
Vegetable Oil – I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Garlicย – It adds a wonderful garlicky flavor. In my view, garlic just makes everything better.
Eggsย – I use two eggs in this recipe. Eggs are must-have for a good and classic Chinese fried rice.
Light Soy Sauceย – This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Oyster Sauce – You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Black Pepper – It adds a bit of peppery flavor, which makes the fried rice more flavorful.
Sugar – You might be surprised how good is it to add sugar in the fried rice. Its caramelization just makes the fried rice extra delicious.
HOW TO MAKE THIS SALMON FRIED RICE
1. Prepare the Salmon and Eggs – Use your hands to flake the Salmon into large chunks and add to a bowl. Set aside. In another bowl, whisk the Eggs well.
2. Cook the Eggs – In a wok, add the Vegetable Oil, on medium-high heat. Add in the Garlic. Stir for about 15 seconds until fragrant. Then pour in the Eggs. Let sit for 30 seconds. Then scramble and stir fry with the Garlic.
3. Add the Rice and Salmon – Add in the cooked Jasmine Rice. Combine well. Then add in the Salmon.
4. Add the Seasonings – Add the Light Soy Sauce and Oyster Sauce. Stir well. Then add in the Black Pepper and Sugar. Continue to stir well.
5. Final touch and garnish – Turn off the heat. Add in chopped Green Onions. Combine throughly. Transfer to serving bowls. Garnish with extra Green Onions and Black Pepper. Ready to enjoy!

If you love a spicy version, instead of adding the Black Pepper, you can add 1 tbsp of Lao Gan Ma Crispy Chili Oil. The taste is great.
