In this recipe, I use lettuce, bean sprouts, and green onions for freshness and texture. But one of the best things about this dish is how flexible it is. You can easily add your favorite vegetables like bok choy or carrots — just make sure to slice them thinly so they cook quickly and blend well with the noodles.
INGREDIENTS
Vermicelli – There are many kinds of Vermicelli that you can choose from. Either kind should work. I love using both the Chinese and the Vietnamese rice noodles brands.
Eggs – I use three large eggs in this recipe. Eggs are must-have for this classic Chinese Fried Rice Noodles dish.
Vegetable Oil – I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Light Soy Sauce – This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Oyster Sauce – You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Dark Soy Sauce – This is normally used to add a nice color to the dish in Chinese cooking.
Green Onions – or called Spring Onions. It adds beautiful green color and it is rich in healthy nutrients.
Black Pepper – It adds a bit of peppery flavor, which makes the noodles more flavorful.
Lettuce – You can use different kind of lettuce. The soft kind works the best.
Bean Spouts – This goes perfectly with the fried rice noodles. We love using Bean Spouts in Chinese cooking.
HOW TO MAKE THIS FRIED RICE NOODLES WITH EGGS RECIPE
Prepare the ingredients – Whisk the Eggs in a bowl. Cut the veggies. Set aside.
Cook the Rice Noodles – Steam a wok of water on medium-high heat. When the water starts steaming, add in the dried Vermicelli. Steam for a few minutes until the noodles open up. The noodles should still be firm, not soft. Then drain and transfer to a large bowl.
Prepare the Rice Noodles – Cover the bowl with a lid and let sit for 10 minutes. After 5 minutes, open the lid and flip the noodles. Then cover and sit for another 5 minutes. Once done, add in the Dark Soy Sauce and mix well. This helps the noodles to get a nice color.
Cook the Eggs – In a wok, add in the Vegetable Oil, on medium-high heat. Pour in the Eggs. Stir fry until the Eggs are half cooked. Transfer to a bowl and set aside.
Assemble the dish – In the same wok, add in more Vegetable Oil, on medium-high heat. Add in the Rice Noodles. Stir fry for 1-2 minutes. Then add in the Eggs and Bean Spouts. Keep stirring. Then add in the Lettuce and Green Onions. Add in the seasoning sauces: Light Soy Sauce and Oyster Sauce. Combine everything well. Cook for another minute or two. Turn off the heat. Add in Black Pepper. Stir well again.
Ready to serve – Transfer to serving plates. Ready to enjoy!

Don’t over-steam the rice noodles — it’s important not to steam the noodles too long in the wok. They should still be slightly firm after steaming. During the resting process in a covered bowl, the residual heat will continue to cook the noodles. This helps maintain that perfect chewy texture when stir-frying. Add dark soy sauce before stir-frying — mixing the noodles with dark soy sauce beforehand gives them a beautiful brown color and helps reduce the stir-frying time in the wok. Customize with your favorite vegetables — you can easily use other vegetables like bok choy or carrots. Just make sure to slice them into thin strips so they cook quickly and blend well with the noodles.
