Shrimp Dumplings

Dumplings are a Chinese specialty and while there are hundreds of different combinations, Shrimp Dumplings are my favorite. During Chinese holidays and festivals, we like to make dumplings at home instead of buying the pre-made ones from the grocery store. Home-made dumplings are definitely the most satisfying!

These Chinese Shrimp Dumplings are fun to make. I love how adorable they look and how super delicious they taste! Everything is harmonious with the influence of Sesame Oil and Chives with the Tofu, Eggs, and Shrimp. These special mouthfuls of glory always remind me of my childhood and high school days in China.

WHAT ARE THE KEY INGREDIENTS?

This recipe has just 5 main ingredients and they taste really amazing together! I love to use large size Shrimp and cut them in big chunks so that I can get a strong taste. If you like this taste, you might also like my Healthy Sauteed Shrimp and Broccoli with Garlic Sauce recipe.

Tofu, Eggs, and Shrimp are like best friends. You can’t go wrong by bringing together these three ingredients! Chives contribute a nice greenness, flavor, and little crunch to the dumplings.

WHAT ABOUT DUMPLING WRAPPERS?

I normally buy my dumpling wrappers pre-made from the store. You can find them in the frozen food section of most Asian grocery stores.

INGREDIENTS

Shrimp – Always use large shrimp for satisfying bites. The shrimp should be peeled and deveined and are cut in big chunks.
Chives – I use Chinese chives here. It is much longer in length compared to the Danish chive here. You can buy the Chinese chives in local Asian grocery store. If you can’t find the Chinese kind, you can use the kind in your regular grocery store.
Tofu – I use Firm Tofu in this recipe. Do not use silk tofu.
Eggs – I use four eggs in this recipe. The eggs are fried and cut in small pieces.
Dumpling Wrappers – I bought the pre-made one from the store. I can make around 26 medium-size dumplings. If you use smaller wrappers, you can make more than 30 dumplings.
Salt and Black Pepper – A good combination to add flavor to the dumpling filling.
Sesame Oil – It has a special flavor and aroma. This is normally used as a finishing oil, which can elevate the flavor and add a delightful richness.
Cornstarch – Cornstarch is widely used in Asian cooking. It is also called corn flour.
Chinese Black Vinegar – This is a fermented vinegar, dark black and made from glutinous rice. It’s quite easy to find in Asian stores. If you can’t find it, you can also use Rice Vinegar.
Light Soy Sauce – This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this.
Pepper Flakes – This adds a bit of spicy taste to the dipping sauce.

HOW TO MAKE THESE SHRIMP DUMPLINGS

1. Prepare all the ingredients for the filling – Fried the Eggs. Cut the Shrimp in big-size chunks. Slice the Chives and the Eggs into small pieces. Use your hands to squeeze the water out of Tofu. Put all the ingredients in a large mixing bowl. Add Salt, Ground Black Pepper, Sesame Oil, and Cornstarch. Mix well.
2. Prepare your countertop – Put a little water in a bowl. Sprinkle some flour onto your countertop as a place to rest the dumplings once they are made. Take one dumpling wrapper and moisten the edges of the wrappers by using the water bowl to wet your fingertips. Then use a spoon to add the fillings into the wrappers.
3. Shape your dumplings – Next, use your fingers to pinch and make any kind of shape you like for the dumplings. Once the dumplings are made set them on the floured countertop to prevent them from sticking to the top and to each other!
4. Cook the dumplings – Use a steamer to steam the dumplings on medium-high heat for 15 minutes.
5. Make the dipping sauce & ready to enjoy – Prepare your dipping sauce: in a small bowl, mix together the Light Soy Sauce, Black Vinegar, and some Pepper Flakes. All ready to serve!

Haini’s Tips

One of the great things about the dumplings is that you can eat them anytime — as snacks, or as an entrée or full meal for breakfast, lunch, or dinner. Once made, they can rest in the freezer for up to a month and can be saved as emergency “go-to” food when guests arrive unexpectedly. Just put the frozen dumplings in a steamer and they will be ready to eat whenever you need them.
