Chinese Scallion Pancakes are a dim sum favorite. They are super flaky and crispy on the outside, and chewy and soft on the inside.
Chinese Scallion Pancakes

Chinese Scallion Pancakes, named ่‘ฑๆฒน้ฅผ in Chinese, are absolutely a dim sum favorite. They are often sold as street food in China. While at home, Scallion Pancakes are normally served as an appetiser, or side dish. I also love to eat this for breakfast. My version of Scallion Pancakes are super flaky and crispy on the outside, and chewy and soft on the inside. With a balance of salt and pepper flavor, they also make a wonderful snack!

The secret to these flaky Scallion Pancakes is how you work on the dough. It is actually very easy to do with a bit of patience. I love my Pancakes nicely thin but still with several layers inside. Each bite is sensational with that wonderful scallion fragrance. They are also perfect for Chinese New Year. Why not make it for the holiday?

It is important to let the dough rest for a good amount of time. If it is hard to roll out the dough, you can just cover the dough again and let it rest a bit longer. Please watch my video for detailed instructions.

Easy Flaky Chinese Scallion Pancakes

Ingredients
  

  • 1 bunch Green Onions, finely chopped

Dough

  • 1/8 tsp Dried Yeast
  • 200 ml Warm Water
  • 300 g All-purpose Flour
  • 15 ml Vegetable Oil
  • 1 tsp Salt

Oil Mixture

  • 40 g All-purpose Flour
  • 1 tsp Black Pepper
  • 50 g Vegetable Oil

Instructions
 

  • In a measurement cup, mix together Dried Yeast and Warm Water.
  • In a large mixing bowl, add in All-purpose Flour and Salt. Gently mix well. Then gradually pour in the yeast water mixture. Use a spatula to mix well. Then add in the Vegetable Oil. Mix well again.
  • Knead the dough for about 5 minutes. Cover the dough with a lid or plastic wrap and rest for 15 minutes.
  • Knead the dough again until the surface is smooth. Shape the dough into a long piece. Cut it into 6 equal pieces. Shape each piece into a ball. Then cover with plastic wrap and rest for 1 hour.
  • Prepare the Oil mixture. In a bowl, mix together All-purpose Flour, Black Pepper, and Vegetable Oil. Set aside.
  • Prepare a bunch of Green Onions. Chop the Green Onions finely.
  • Roll each piece into a thin sheet. Try to roll it into a round shape. Brush with some Oil mixture. Spread some Green Onions evenly on top. Cut one side of the dough and roll it from one side to another (refer to video).
  • Shape the dough mixture into a ball. Repeat the same procedure with other 5 pieces. Cover them with plastic wrap and rest for another 15 minutes.
  • Use your rolling pin to roll the pancake dough into a round sheet. It does not have to be perfectly round.
  • In a frying pan, add some Vegetable Oil, on medium heat. Fry the pancake for about 3 minutes on each side until nicely golden brown. Fry each pancake separately.
  • Transfer to a plate. Ready to enjoy!
