I always like to add a fusion element to my recipes. This Bacon and Egg Fried Rice has a nice combination of Eastern and Western tastes and ingredients which delivers a wonderful flavor and aroma. The fried rice is chewy and flavorful. The Garlic, Butter, and Bacon provide a special fragrance and the Parmesan Cheese garnish fuses it all together.

BACON AND EGGS
Bacon and Eggs are a marriage made in heaven! In this recipe, you will need 4 Eggs in total. I use a special technique in Chinese cooking when it comes to fried rice.
Two Eggs are mixed with the cooked rice before cooking and the other two are wok-fried with other ingredients. In this way, chefs ensure that the fried rice is well coated with the Eggs when cooking. The other Eggs will form into nice recognizable pieces in the rice. Please check out my video for more specific details.
INGREDIENTS
Jasmine Riceย โ This is my favorite kind of rice. You can also use Basmati rice. I love to cook my rice the day Iโm making the fried rice. If you have any leftover rice too, great!
Bacon – Either kind of Bacon should work. Buy the regular kind from your local supermarkets.
Eggs – I use four eggs in this recipe. Eggs are must-have for a good and classic Chinese fried rice.
Light Soy Sauceย โ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Vegetable Oilย โ I love using this for frying. I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Sugarย โ You might be surprised how good is it to add sugar in the fried rice. Its caramelization just makes the fried rice extra delicious.
Green Onionsย โ or called Spring Onions. This is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Garlicย โ It adds a wonderful garlicky flavor. In my view, garlic just makes everything better.
Butter – Regular butter works just fine here. You can also use vegan butter if you prefer.
Black Pepper – A little peppery flavor here just makes the fried rice taste better.
Parmesan Cheese – A little bit of fusion element added here. You will be surprised to find out how good it blends in.
HOW TO MAKE THIS BACON AND EGG FRIED RICE
1. Cook the Rice and mix well with Eggs – Cook the Jasmine Rice in a pot on medium high โ medium โ low for about 15 minutes until the rice is well cooked. Transfer the cooked rice to a bowl and set aside to let it cool down a bit. Then add 2 Eggs to the Rice and mix well.
2. Prepare more Eggs – In a small bowl, whisk the other 2 Eggs and set aside.
3. Fry the Bacon – In a wok, add the Vegetable Oil and Butter, on medium-high heat. Then add the Bacon, and fry until the Bacon is crispy.
4. Assemble the dish – Add the Garlic. Stir for about 20 seconds until fragrant. Add the cooked Jasmine Rice (covered with Eggs). Stir well with the Garlic, Butter and Bacon. Push the Rice to the edge of the wok and add the whisked Eggs. Fry the Eggs until medium before combining with the Rice. Add the Light Soy Sauce. Mix thoroughly. Then add the Sugar and Ground Black Pepper. Mix well again.
5. Ready to serve – Turn off the heat. Add the Green Onions and stir gently. Before serving, add some grated Parmesan Cheese for garnish. Ready to Enjoy!
Haini’s Tips
โข I like to cook my rice the same day when I make fried rice. You can always use leftover rice to make fried rice. Either way, it will turn out great! โข When the rice just starts to boil, turn down the heat to medium or medium-low and continue to cook until the water is well absorbed. โข It is important not to open the lid while the rice is cooking.
