Many of my recipes have used Lao Gan Ma because I genuinely cannot get enough of it. For this recipe, I used the โChicken Flavor Chili Oil with Tofuโ version, which adds an extra layer of richness and texture to the fried rice.

The garlic shrimp is truly one of my favorite parts of this recipe. The shrimp is cooked with plenty of garlic until juicy and fragrant, which pairs perfectly with the savory fried rice. THE RICE
For the rice, many Chinese home cooks recommend using one-day-old rice for the best fried rice texture. The rice grains stay separated more easily and fry beautifully in the wok. However, if you do not have leftover rice, it is completely fine to cook fresh rice on the same day. This is actually what I normally do. I simply let the Jasmine Rice cool completely before stir-frying, and it works wonderfully as well.

Lao Gan Ma Garlic Shrimp Fried Rice
Ingredientsย ย
- 3 cups cooked Jasmine Rice or 1 cup uncooked Jasmine Rice
- 14 large Shrimp, peeled and deveined
- 2 tbsp Vegetable Oil
- 6 large Garlic Cloves, finely chopped
- Pinch of Salt
- 2 large Eggs, whisked
- 2 tbsp Light Soy Sauce
- 1 tbsp Oyster Sauce
- 2 tbsp Lao Gan Ma, Chinese Spicy Sauce (Chicken Flavor Chili Oil with Tofu)
- 1 tsp Sugar
- 3 Green Onions, chopped
Instructionsย
- Cook the Jasmine Rice on medium high โ medium โ low for about 15 minutes until the rice is well cooked. Transfer the cooked rice to a large bowl and set aside to let it cool down.
- In a small bowl, whisk the Eggs well.
- In a wok, add the Vegetable Oil, on medium-high heat, add in the Garlic. Stir for about 20 seconds until fragrant. Then add in the Shrimp.
- Add a Pinch of Salt. Cook the Shrimp for 2-3 minutes until nicely pink.
- Pour in the Eggs. Let sit for 30 seconds. Then scramble and stir-fry with the Shrimp for about 1-2 minutes.
- Add in the cooked Jasmine Rice.
- Gently mix well. Add the Light Soy Sauce, Oyster Sauce, and Sugar. Mix well again. Then add in the Lao Gan Ma and mix well.
- Add in chopped Green Onions and combine thoroughly.
- Transfer to serving bowls. Garnish with more chopped Green Onions. Ready to enjoy!
