Do you often wonder what to do with your leftover chicken? Especially after a roast chicken dinner? Well, you have come to the right place. For this recipe, I am using leftover Chicken breast together with Tofu and Eggs to make a savoury, satisfying, and mouthwatering fried rice with a little spicy tang. Trust me, the recipe is also simple and easy to make!
If you are like me who enjoy a nice roast chicken dinner, there is always some leftover in my house, especially with chicken breast. Of course, you can make a delicious chicken salad or sandwich with your leftover, but I absolutely love a flavorful and comforting fried rice with my favorite Lao Gan Ma chili oil. For a classic and good fried rice, you definitely will need eggs. I also use tofu that is pan-fried beforehand, which is a great addition to this fried rice.
For this recipe, you can use any kind of Lao Gan Ma chili sauce. My favorite is Spicy Chili Crisp, which is popular globally. I grew up with this chili sauce and still love it today. I remember every household that I knew had this chili sauce when I was living in China. It’s a kitchen staple for us.

Perfect use of leftover Chicken – This is a go-to recipe for your leftover Chicken.
Full of Umami – The combination of different sauces create a umami flavor, which is super satisfying and comforting.
Healthy and delicious – The chicken is full of protein. Tofu and Eggs are also great sources of protein. Overall, this fried rice is both healthy and delicious.
So easy to make – The recipe is simple to follow and easy to make. It will only take you maximum 25 minutes to prepare.
INGREDIENTS
Jasmine Rice – This is my favorite kind of rice. You can also use Basmati rice. I love to cook my rice the day I’m making the fried rice. If you have any leftover rice too, great!
Leftover Chicken – I normally have chicken breast leftover, which is what I use for this recipe. If you also have chicken leg meat leftover, it is even better.
Eggs – I use two eggs in this recipe. Eggs are must-have for a good and classic Chinese fried rice.
Firm Tofu – You should always use Firm Tofu for fried rice. I like to fry the Tofu first before adding to the fried rice for the best crispy texture.
Lao Gan Ma Chili Sauce – This is one of the most popular Chinese chili sauces. Either kind can work in this recipe. You can buy this chili sauce in your local Asian markets or grocery stores.
Light Soy Sauceย โ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Oyster Sauce – You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Sugar – You might be surprised how good is it to add sugar in the fried rice. Its caramelization just makes the fried rice extra delicious.
Vegetable Oil – I love using this for frying. I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Green Onionsย โ or called Spring Onions. This is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Garlic – It adds a wonderful garlicky flavor. In my view, garlic just makes everything better.
Sesame Seedsย โ use the roasted kind. I also love this for garnishing the dish.
HOW TO MAKE THIS LEFTOVER CHICKEN & TOFU FRIED RICE
1. Prepare the Chicken and other ingredients – Use your hands to shred the leftover Chicken breast into pieces. Add to a bowl and set aside. In a small bowl, whisk the Eggs well. Cut the Tofu in cubes and add to a bowl.
2. Cook the Rice – Cook the Jasmine Rice on medium high โ medium โ low for about 15 minutes until the rice is well cooked. Turn off the heat and let sit for another 5 minutes. Transfer the cooked rice to a large bowl and set aside to let it cool down.
3. Fry the Chicken and Tofu – In a wok, heat the Vegetable Oil over high heat. Add the Chicken and spread it out. Allow to cook until golden.ย Then break up the Chicken and stir well. Transfer to a bowl and set aside. In the same wok, add the Vegetable Oil over high heat. Add in the Tofu and fry on both sides until golden for 2-3 minutes. Transfer to a bowl and set aside.
4. Cook the Eggs – In the wok, add in 2 tbsp Vegetable Oil over medium-high heat. Add in the Garlic. Stir for 15 seconds until fragrant. Then pour in the Eggs. Let sit for 30 seconds. Then scramble and stir fry with the Garlic. Add in the cooked Jasmine Rice. Combine well.
5. Assemble the dish – Then add in the fried Chicken breast and Tofu. Toss everything well. Add in the Light Soy Sauce and Oyster Sauce. Stir well again. Then add in the Lao Gan Ma Chili Oil and Sugar. Stir everything well. Turn off the heat. Add in chopped Green Onions. Combine thoroughly.
6. Ready to serve – Transfer to serving bowls. Garnish with some toasted Sesame Seeds. Ready to enjoy!

3cupscooked Jasmine Rice or 1 cup uncooked Jasmine Rice
300g/ 10.6 oz leftover Chicken breast, shredded
6Garlic Cloves, finely chopped
2Eggs, whisked
200g/ 7 oz Firm Tofu, cut in cubes
3Green Onions, finely chopped
2-3tbspLao Gan Ma Chili Oil
2tbspLight Soy Sauce
2tbspOyster Sauce
1tspSugar
2tbspVegetable Oil + extra for frying
some toasted Sesame Seeds for garnish
Instructions
Use your hands to shred the leftover Chicken breast into pieces. Add to a bowl and set aside.
In a small bowl, whisk the Eggs well. Cut the Tofu in cubes and add to a bowl.

Transfer to serving bowls. Garnish with some toasted Sesame Seeds. Ready to enjoy!
