Shrimp Dumplings in Red Chili Oil are classic comfort food. They are so satisfying with big mouthful of yumminess. I have loved those Shrimp Dumplings since I was a kid. What I love to add to those dumplings after growing-up is Red Chili Oil. The spiciness certainly excites my appetite even more.

Dumplings have always been my favorite dim sum dish. They can be steamed, fried, stir-fried, or cooked in water. More importantly, you can eat them anytime โ€” as snacks, or as an entrรฉe or full meal for breakfast, lunch, or dinner. I have another heavenly Shrimp Dumplings recipe that you should definitely check out. HOW TO MAKE THIS SHRIP DUMPLINGS IN RED CHILI OIL

1. Prepare the filling – In a mixing bowl, add the diced Shiitake Mushrooms, chopped Green Onions, chopped Chives, grated Ginger, grated Garlic, Egg White, Sea Salt, White Pepper, Sesame Oil, and Cornstarch. Combine everything well. Set aside.
2. Prepare the Red Chili Oil – In another bowl, mix together Light Soy Sauce, Chinese Black Vinegar, Lao Gan Ma Crispy Chili Oil, and Sugar. Set aside.
3. Set up the countertop for making the dumplings – Put a little water in a bowl. Sprinkle some flour onto your countertop as a place to rest the dumplings once they are made. Take one dumpling wrapper and moisten the edges of the wrappers by using the water bowl to wet your fingertips. Then use chopsticks or a spoon to add the fillings into the wrappers.
4. Fold the dumplings – Next, use your fingers to pinch and make any kind of shape you like for the dumplings. Once the dumplings are made set them on the floured countertop to prevent them from sticking to the top and to each other! 5. Cook the dumplings – Cook the dumplings in a large pot of simmering water for 5-6 minutes or until the filling is cooked.ย 
6. Ready to serve – Serve the dumplings in a bowl. Add in 3-4 tbsp of Homemade Red Chili Oil and garnish with some chopped Green Onions. Ready to enjoy!

Haini’s Tips

โ€ข I made 20 medium-large dumplings with this recipe. If you use smaller wrappers, you can make up to 30 dumplings.
โ€ข I use fresh Shiitake Mushrooms here. But the dried kind works just well.
โ€ข Once made, those dumplings can be frozen. The next day, put the frozen dumplings in a steamer or cook them in a pot of water, and they will be ready to eat whenever you need them.

Ingredients
  

  • 300 g Shrimp, peeled and deveined, cut into small chunks
  • 3-4 Shiitake Mushrooms, diced
  • 2 Green Onions, finely chopped
  • 1 tbsp Ginger, finely grated
  • 2 Garlic Cloves, finely grated
  • 4 Chives, finely chopped
  • 1 Egg White
  • 1/2 tsp Sea Salt
  • 1/2 tsp White Pepper
  • 2 tsp Sesame Oil
  • 2 tsp Cornstarch
  • 20 Dumpling Wrappers (medium-large)
  • some chopped Green Onions for garnish

Red Chili Oil
