Double Cheesy and Spicy Udon Noodles is another level of comfort food. It tastes so creamy, comforting, and delicious with a nice tang of spiciness. And it only takes 15 minutes to make. This is great for a quick and easy lunch or a simple meal for dinner after a busy work day.

Udon Noodles is one of my favorite kind of noodles and I always love a bit of fusion in my recipes. Double Cheesy and Spicy Udon Noodles is mixed with a bit of Korean and Italian. You can also check out my Bacon and Egg Udon Noodles, which is a simple, easy, and fusion recipe as well.

Easy and quick to make – The recipe is simple, easy, and quick to make. It takes only 15 minutes with simple ingredients.
Good amount of nutrition – Udon noodles contains high amount of B vitamins and fiber, which helps to reduce the risk of colorectal cancer and keep you energized. The cheese has a good level of protein and Green onions provide antioxidants.
Serve as any meal of the day – You can make this udon noodles recipe as lunch, dinner or even breakfast. Enjoy this at any time of the day.

CHEESE

For this recipe, I use Parmesan Cheese and Mozzarella Cheese. They are a great combo!

CHILI SAUCE

The signature sauce for this recipe is Gochujang – Korean Spicy Sauce. It goes amazingly well with the cheese to create a balanced creamy spicy sauce.

INGREDIENTS

Udon Noodles – This is one of the most popular noodles in Asian cooking. You can buy this from most Asian grocery stores. Your local stores will likely have this as well.
Sesame Oil – It has a special flavor and aroma. This is normally used as a finishing oil, which can elevate the flavor and add a delightful richness.
Butter – You can use regular butter or vegan butter.
Gochujang – This is the most popular Korean Spicy Sauce. It has a bold sweet, spicy, and umami flavor. I like to use it for different recipes. You can find it in your local Asian grocery store. These days, many regular grocery stores sell this too. Vegan option is also available.
Chili Flakes – This adds a bit extra spicy tang. If you want to tune down the spiciness, you can skip this.
Whole Milk – This retains its fat (about 3.5 percent) and it’s slightly thick. You can also use reduced-fat milk (about 2 percent) or skim milk.
Parmesan Cheese – This is one of my favorite kind of Italian cheeses. It has this amazing salty, savoury, and rich taste.
Mozzarella Cheese – I like to shred the Mozzarella Cheese here. You can use any kind of Mozzarella Cheese. But for the best quality, I recommend Buffalo Mozzarella.
Green OnionsGreen Onions – or called Spring Onions. It is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Gochugaru – This is Korean Chili Powder. It has a complex flavor profile with spicy, sweet, and slightly smoky tastes. You can find this in your local Asian grocery stores.
Chili Cheese Udon Noodles

HOW TO MAKE THIS DOUBLE CHEESY & SPICY UDON NOODLES

1. Cook the Udon Noodles – Boil a pot of water. Cook the Udon Noodles for 1 minute until the noodles loosen up. Drain and transfer to a bowl. Add in Sesame Oil. Mix well and set aside.
2. Cook the Cheesy & Spicy Sauce – In a wok, on medium-high heat. Add the Butter. Once almost melted, add in the All-purpose Flour. Whisk well. Then add in some Chili Flakes and the Whole Milk. Keep whisking until a nice sauce is formed. Turn the heat down to low. Next, add in Gochujang, Parmesan Cheese and half of shredded Mozzarella cheese. Stir well to combine. And the sauce looks thick and cheesy.
3. Assemble the dish – Add in the Udon Noodles and the remaining Mozzarella Cheese. Combine everything well.
4. Ready to serve – Transfer to a serving bowl. Sprinkle over some Green Onions and Gochugaru. Ready to enjoy!

Haini’s Tips

• For this recipe, you can also use Ramen Noodles.
• You can adjust the cooking time to decide how thick you want the sauce to be. If you prefer the cheese is a bit more liquid like, do not cook the sauce for too long before mixing with the noodles.
• You can also adjust the amount of cheese and milk to create the creamy texture that you like.

Ingredients

  • 2 packages Udon Noodles
  • 1 tsp Sesame Oil
  • 2 tbsp Butter
  • 2 tsp All-purpose Flour
  • 1/2 tsp Chili Flakes
  • 1/2 cup Whole Milk
  • 1 tbsp Gochujang
  • 40-50 g Parmesan Cheese, finely grated
  • 1/3 cup shredded Mozzarella Cheese
  • 2 Green Onions, finely sliced
  • 1/2 tsp Gochugaru (Korean Chili Powder) for garnish

Instructions
