Sichuan Chili Pork Stir-fry with Broccoli is rich in flavor and high in protein. It has a great combination of spicy and sweet flavors. Sichuan Chili Pork is a classic Sichuan dish. But I have added my own twist to this recipe. It gives you a numbing sensation with a kick. The pork tastes crispy and juicy at the same time. And it is a perfect weeknight meal. The recipe is also simple to make.

You can also use Green Bell Pepper or Bok Choy. In my view, Broccoli makes the most beautiful presentation.

HOW TO MAKE THIS SICHUAN CHILI PORK WITH BROCCOLI

1. Marinate the Pork – In a large mixing bowl, mix together Pork, Ginger, Salt, Chinese 13 Spice Powder, Chinese Cooking Wine, Light Soy Sauce, Oyster Sauce, and Baking Soda. Set aside to marinate for 30 minutes. After 30 minutes, add in the Egg White and the Cornstarch to the Pork marinade. Mix well. Set aside.
2. Cook the Broccoli – Meanwhile, cook the Broccoli in a pot of boiling water for 2 minutes for a nice chewy texture. Drain and transfer the Broccoli to a large bowl. Set aside.
3. First-fry the Pork – In a wok, on medium-high heat, add 1 cup Vegetable Oil. Check the temperature of the Oil with a wooden chopstick. Once you see the bubbles coming up quickly at the edge of the chopstick, the oil is ready. Add the Pork pieces one at a time into the oil. Fry the pork in batches. First-fry for 3-4 minutes until cooked through and nicely golden. Drain and remove. Repeat the same process.
4. Second-fry the Pork – Second-fry all the Pork for another 1-2 minutes until the color turns golden brown. Drain and set aside.
5. Assemble the dish – Leave 2 tbsp of Oil in the wok. On medium heat, add in Ginger and Garlic. Stir for 10 seconds. Add in Dried Red Chilis and Sichuan Peppercorns. Stir for another 10 seconds. Then add in all the Pork pieces. Stir well. Add the Sugar. Finally add in Broccoli and stir for 1-2 minutes. Then add in Green Onions and Roasted Sesame Seeds. Combine everything well.
6. Ready to serve – Before serving, sprinkle some extra chopped Green Onions and roasted Sesame Seeds on top. Ready to enjoy!

Haini’s Tips

1. I use Pork tenderloin in this recipe. You can also use Pork Belly.
2. When frying the Pork, remember to check the color of the Pork closely. Do not overcook. You don’t want the Pork to get too dry.
3. Do not overcook the Broccoli. Cook the Broccoli in boiling water for 2 minutes. Then remove and set aside. As it will be cooked again during stir-fry.

Ingredients
  

  • 400 g / 14.1 oz Pork Tenderloin, cut in slices
  • 400 g / 14.1 oz Broccoli, cut in bite-size pieces
  • 3 large Garlic Cloves, finely chopped
  • 1 tsp Ginger, finely chopped
  • 3 long Dried Red Chilis, cut in small pieces
  • 1 tsp Sichuan Peppercorns, crushed
  • 2 Green Onions, sliced
  • 1/2 tsp Sugar
  • some Roasted Sesame Seeds

Marinade

  • 1 tsp Chinese 13 Spice Powder
  • 1 tsp Salt
  • 1 tsp Ginger, grated
  • 1 tbsp Chinese Cooking Wine
  • 1 tbsp Light Soy Sauce
  • 1 tbsp Oyster Sauce
  • 1/2 tsp Baking Soda
  • 1 Egg White
  • 2 tbsp Cornstarch

Instructions

  • Before serving, sprinkle some extra chopped Green Onions and roasted Sesame Seeds on top. Ready to enjoy!
