The flavors are perfectly infused with a creamy texture and a spicy tang. The taste is fresh, light, and creamy at the same time with no cream in the recipe.

Budget friendly – who doesn’t like a meal that is so delicious and is cheap to make? well, I love this.
Perfect meal any time of the day – You can make this ramen carbonara at any time of the day. Enjoy this as breakfast, lunch, or dinner.
INGREDIENTS
Korean Shin Ramen – This is one of my favorite kind of ramen noodles. You can easily find this in your local Asian grocery stores. We will also use the Chili Powder from the ramen package for this recipe.
Bacon – Just use a regular kind of Bacon that you can easily buy from your supermarkets. If you want it to be more Italian, I recommend to use pancetta.
Eggs – I use two large eggs plus 1 extra egg yolk for this recipe here.
Parmesan Cheese – This famous Italian cheese works its magic here.
Olive Oil – use Extra Virgin Olive Oil here. Do not use other kind of oil.
Salt & Black Pepper – Salt and Pepper are the perfect combo of seasonings.
Green Onionsย โ or called Spring Onions. This is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
HOW TO MAKE THIS RAMEN CARBONARA
1. Prepare the Eggs & Parmesan mixture – In a large bowl, mix together Eggs, Parmesan Cheese, Black Pepper, and Salt. Set aside.
2. Fry the Bacon – In a frying pan, add the Olive Oil, on medium-high heat, cook the Bacon until crispy. Turn off the heat and sit on the stovetop.
3. Cook the Ramen Noodles – In a pot, cook the Ramen Noodles in boiling water for a few minutes until just cooked but still a little firm. Drain the noodles and reserve some of the cooking water.
4. Assemble the dish – Transfer the Ramen Noodles into the pan, on low heat. Coat well with the Bacon for 1-2 minutes. Add the Eggs and Parmesan mixture. Be careful not to scramble the Eggs. Keep the heat really low or off. Coat well with the noodles and add a little of reserved cooking water to get to a nice consistency!
5. Ready to serve – Transfer to serving plates. Before serving, sprinkle extra Black Pepper, grated Parmesan Cheese, chopped Green Onions, and some Chili Powder from the Ramen package for garnish. Serve right away!

It is important to reserve some cooking water from the noodles to help with the consistency of the Ramen. The Ramen Carbonara needs to be served right away while itโs still warm. Otherwise, the Parmesan Cheese might really gum up the taste. Do not skip the last step of adding the Chili Powder on top. This will give you a fantastic spicy tang which will enhance your appetite.

2largewhole Eggs and 1 Egg Yolk, beaten in bowl, room temperature
80ggrated Parmesan Cheese
2tbspExtra Virgin Olive Oil
1/4tspBlack Pepper
1/4tspfine Salt
some chopped Green Onions
some Chili Powder from the Ramen package
Instructions
In a large bowl, mix together Eggs, Parmesan Cheese, Black Pepper, and Salt. Set aside.
In a frying pan, add the Olive Oil, on medium-high heat, cook the Bacon until crispy. Turn off the heat and sit on the stovetop.
