This Korean Stir-fry Ramen recipe is fast and easy to make. It’s great for a quick meal after work. The ingredients can readily be found in big grocery stores and in most Asian food markets.

Once a while, I will be craving Instant Noodles. Do you ever feel the same? Korean Ramen is often my choice. I have cooked the Ramen in different ways including the basic one shown on the package. But my favorite way is stir-fry.

What kind of Ramen do I use?

I prefer Kimchi flavor (see the picture below). Since one package of this Ramen is about 120g, it’s perfect for one person. You can also use Shin Ramen or any kind. They are equally good! If you like it spicier, Shin Ramen is your choice. You might like my Ramen Carbonara recipe – where I use Shin Ramen.

Ingredients

  • 1 package Korean Kimchi Ramen Noodles (or Shin Ramen)
  • 2 Eggs
  • Half of a Bok Choy (cut into small pieces)
  • 3 Garlic Cloves, minced
  • 1 Vegetable Mix from the Ramyeon package
  • 1 Chili Powder Mix from the Ramyeon package
  • 2 tbsp Sesame Seed Oil
  • 1 tbsp Light Soy Sauce
  • 1 tsp Rice Vinegar (or White Vinegar)
  • 2 tsp Sesame Seeds

Instructions

  • Cook the Ramen in a small pot of boiling water for about 3 minutes, until slightly softened, then add the Vegetable Mix from the package.
  • Drain the Ramen, and save some of the water for later use.
  • In a frying pan, add Sesame Seed Oil. When the oil gets hot, add Garlic and stir for about 10 seconds. Add the Bok Choy and Eggs.
  • Add the Ramen, Chili Powder Mix, as well as some Ramen water to get the consistence you want. Then add the Soy Sauce and Vinegar for taste.
  • Just before serving, add some Sesame Seeds for garnish.

Notes

  • You can substitute Rice Vinegar with White Vinegar.

Korean Stir-fry Ramen

When I do not have too much time for cooking, Ramen Noodles is always a simple and easy choice. This is just one of the many ways to enjoy Ramen.

Sesame seed oil makes the Ramen smell amazing! The vinegar gives the noodles a very fresh taste. Well, if you really like that fresh taste, you can add a generous amount of vinegar to your noodles. Besides that, you can also taste the Kimchi flavor and a bit of spiciness.
