Salt and Pepper Shrimp Fried Rice is a combination of two Chinese well-known dishes: Salt and Pepper Shrimp and Egg Fried Rice. A classic meets another classic! There is glory in this love story!

Every ingredient completes the other as a good couple should. And the magic comes forth through the fusing of Garlic and Shrimp, Shrimp and Egg, Salt and Pepper, and Egg Fried Rice. THE RICE

As you might have learned from some famous Chinese Cooks, it is better to use one-day old rice to make the perfect fried rice dishes. But if you donโ€™t have leftover rice, itโ€™s perfectly okay to cook the rice during the day and let it cool down before cooking. I use Jasmine Rice in my recipe.

SALT AND PEPPER MIX

For the Salt and Pepper Mix, I use Sichuan Peppercorns, Black Peppercorns, and Sea Salt. I like to toast the Peppercorns on medium-heat for about 1 minute before mixing with the Sea Salt to get the best fragrance.

HOW TO MAKE THIS SALT AND PEPPER SHRIMP FRIED RICE

1. Prepare the Salt and Pepper Mix – In a frying pan, toast Sichuan Peppercorns and Black Peppercorns on medium heat for about 1 minute until fragrant. Then use a Mortar and Pestle to grind the Peppercorns. Transfer to another bowl. Add in the Sea Salt. Mix well. Salt and Pepper Mix is ready. Set aside.
2. Prepare the Eggs – In a small bowl, whisk the Eggs well.
3. Cook the Shrimp – In a wok, add the Vegetable Oil, on medium-high heat, add in the Garlic. Stir for about 20 seconds until fragrant. Then add in the Shrimp. Sprinkle about 1/2 tbsp of Salt and Pepper Mix or more according to your preference. Cook the Shrimp for 2-3 minutes until nicely pink.
4. Assemble the dish – Pour in the Eggs. Let sit for 30 seconds before scrambling the Eggs. Stir-fry with the Shrimp for about 1-2 minutes. Then add in the cooked Jasmine Rice. Gently mix well. Add in Light Soy Sauce and Sugar. Mix well again. Add in chopped Green Onions and more Salt and Pepper Mix. Combine thoroughly.
5. Ready to serve – Transfer to serving bowls. Garnish with more chopped Green Onions and Salt and Pepper Mix as desired. Ready to enjoy!

Haini’s Tips

There will be some leftover Salt and Pepper Mix. Reserve it in a container and use it for other dishes as you desire. Do not waste it. Once you taste this spice you will use it often.

Ingredients
  

  • 3 cups cooked Jasmine Rice
  • 14-15 large Shrimp, peeled and deveined
  • 1 tbsp Sichuan Peppercorns
  • 1 tbsp Black Peppercorns
  • 1 tbsp Sea Salt
  • 6 large Garlic Cloves, finely chopped
  • 2 tbsp Vegetable Oil
  • 2 Eggs, whisked
  • 2 tbsp Light Soy Sauce
  • 1/2 tsp Sugar
  • 3 Green Onions, chopped

Instructions
