Ingredienser
- 3 kopper kogte jasminris
- 14-15 store Rejer, pillede og deveirede
- 1 Spsk. Sichuan peberkorn
- 1 Spsk. Sorte peberkorn
- 1 Spsk. Havsalt
- 6 store Hvidløgsfed, finthakket
- 2 Spsk. Vegetabilsk olie
- 2 Æg, pisket
- 2 Spsk. Lys sojasovs
- 1/2 tsk Sukker
- 3 Forårsløg, hakket
Sådan gør du
- Rist sichuanpeberkorn og sorte peberkorn på en pande ved middel varme i ca. 1 minut, indtil de dufter. Brug derefter en morter og en støder til at male peberkornene. Overfør til en anden skål.
- Tilsæt havsalt. Bland det godt. Salt- og peberblandingen er klar. Sæt den til side.
- Pisk æggene godt sammen i en lille skål.
- Tilsæt vegetabilsk olie i en wok ved middelhøj varme, og tilsæt hvidløg. Rør rundt i ca. 20 sekunder, indtil det dufter. Tilsæt derefter rejerne.
- Drys ca. 1/2 spsk salt- og peberblanding over eller mere, alt efter hvad du foretrækker. Kog rejerne i 2-3 minutter, indtil de er pænt rosa.
- Hæld æggene i. Lad det stå i 30 sekunder, før du laver røræg. Rør rundt med rejerne i ca. 1-2 minutter. Tilsæt derefter de kogte jasminris.
- Bland forsigtigt godt. Tilsæt lys sojasauce og sukker. Bland godt igen.
- Tilsæt hakkede forårsløg og mere salt og peber. Bland det grundigt sammen.
- Overfør til serveringsskåle. Pynt med flere hakkede grønne løg og salt- og peberblanding efter ønske. Klar til at blive nydt!
