A bit of fusion here and there has been my signature when creating recipes. This Spicy Garlic Udon Noodles is mix of Chinese, Korean, and Japanese. You can image how much I love Asian food and how amazing that different Asian ingredients work magically together.

SPICY GARLIC BUTTER SAUCE
In my view, I have almost perfected this spicy garlic butter sauce with simple Asian sauces. The key spicy sauce is Korean Gochujang. Together with Oyster Sauce and Light Soy Sauce, the final taste is just magical. The use of Butter and Olive Oil makes it wonderfully creamy. And of course, I use lots of Garlic here. The spicy-creamy-garlicky flavors are sensational, which increase your appetite and make you crave for more.
INGRDIENTS
Udon Noodlesย โ This is one of the most popular noodles in Asian cooking. You can buy this from most Asian grocery stores. Your local stores will likely have this as well.
UnsaltedButterย โ If you don’t have unsalted butter, you can use regular butter or vegan butter.
Broccoli – I love the look, color, and the taste of Broccoli. You can also use Bok Choy.
Gochujangย โ This is the most popular Korean Spicy Sauce. It has a bold sweet, spicy, and umami flavor. I like to use it for different recipes. You can find it in your local Asian grocery store. These days, many regular grocery stores sell this too. Vegan option is also available.
Chili Flakesย โ This adds a bit extra spicy tang. If you want to tune down the spiciness, you can skip this.
Light Soy Sauceย โ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Oyster Sauceย โ You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Olive Oil – Any kind of Olive Oil should work. I especially like the extra virgin olive oil.
Vegetable Oilย โ I normally use Rapeseed Oil. You can also try Sunflower Oil.
Green Onions – or called Spring Onions. It is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Garlic – Use lots of Garlic here. The garlicky flavor is amazing in this dish.
Frozen Dumplings – You can easily buy some frozen dumplings at your local grocery store. If you have homemade ones that are leftover, perfect, you can use those.
HOW TO MAKE THIS SPICY GARLIC UDON NOODLES
Make the spicy garlic butter sauce – In a frying pan, on medium-high heat, add the unsalted Butter and Olive Oil. Once melted, add the Garlic. Gently stir well until fragrant. Then add the Chili Flakes. Continue to stir. Add in Oyster Sauce, Light Soy Sauce, and Gochujang. Simmer and combine well for 1-2 minutes. Turn the heat off and set aside
Fry the Dumplings – In another frying pan, add in Vegetable Oil, fry some frozen Dumplings for 6-7 minutes until nicely golden. Remove and set aside.
Cook the Broccoli – In a pot, boil some water on high heat, cook the Broccoli for about 2 minutes. Drain and set aside.
Cook the Udon Noodles – Boil a pot of water and cook the Udon noodles for 1-2 minutes until the noodles loosen up. Drain and set aside.
Assemble the dish – Reheat the spicy garlic butter sauce on medium-high heat. Add the Udon noodles directly into the pan. Cook and stir for about 2 minutes until everything is well combined. The sauce will get thicker and look glossy. Add in the cooked Broccoli. Mix well.
Ready to serve – Transfer to serving plates. Place some fried Dumplings on top and garnish with some chopped Green Onions. Ready to enjoy!ย
Haini’s Tips
– You can choose frozen dumplings of your choice. It can be vegetarian or with meat. – I love the Broccoli in this dish. You can also substitute Broccoli with Bok Choy. – Remember not to cook the Udon Noodles for too long in the water as it will be cooked again with the sauce. You want to keep the good chewy texture of the noodles. – If you don’t have unsalted Butter, you can just use regular Butter. – If you do not want to add dumplings, you can also add Shrimp, Chicken, or Tofu.
