Korean Kimchi Bacon Cheese Ramen
Ingredients
- 2 packages Instant Ramen Noodles
- 1 cup Kimchi
- 1/3 cup / 80 ml Kimchi Juice
- 100 g Bacon , cut in small pieces
- 3 large Garlic Cloves, finely chopped
- 1/2 tsp Sugar
- 2 tsp Sesame Oil + 2 tsp extra
- 2 tsp Vegetable Oil
- 1/2 tsp Chicken Bouillon
- 1 small Red Onion, diced
- 2 Green Onions, chopped
- 1/3 cup / 80 ml reserved Ramen Water
- 1/4 cup Shredded Cheddar Cheese or more
Instructions
- Boil a pot of water. Cook the Ramen Noodles for 2-3 minutes. Do not overcook. Drain and rinse with cold water. Reserve 1/3 cup Ramen Water. Transfer the Ramen to a mixing bowl. Add in Sesame Oil to loosen up the noodles. Set aside.
- In a frying pan, on medium-high heat, add in Vegetable Oil. Add the Bacon and fry until the Bacon is a bit crispy. Add in the Garlic, stir for about 15 seconds until fragrant.
- Add in the Red Onions. Stir-fry for about 2 minutes until the Onions are a bit softened. Then add in the Kimchi. Stir well for another minute.
- Add in the Ramen, Kimchi Juice, Sugar, Chicken Bouillon, and Ramen Water. Mix to combine well. Then add in the Sesame Oil. Mix well again.
- Add in the chopped Green Onions. Toss well. Turn down the heat to medium or medium-low. Sprinkle Shredded Cheddar Cheese on top. Then cover with a lid and let the cheese melt.
- Transfer to serving bowls. Garnish with extra chopped Green Onions or top with a Fried Egg. Ready to enjoy!
