My version of Korean Kimchi Bacon Cheese Ramen is packed with addictive flavors with chewey noodles. It tastes so delicious and comforting. This cheesy Kimchi Bacon Ramen is a perfect weeknight meal or a simple lunch. And it only takes 20 minutes or less to make. Why not indulge yourself with this easy and lavish meal whenever you can?

The ingredients are so simple and you probably already have most of them in your kitchen. If not, remember to store some Kimchi, Bacon, and Ramen Noodles at your pantries from now on, as they come in really handy. Some melted Cheddar Cheese on top is a wonderful surprise for this dish. You will have to try it to find out.

Korean Kimchi Bacon Cheese Ramen

HOW TO MAKE THIS KIMCHI BACON CHEESE RAMEN

1. Cook the Ramen noodles – Boil a pot of water. Cook the Ramen Noodles for 2-3 minutes. Do not overcook. Drain and rinse with cold water. Reserve 1/3 cup Ramen Water. Transfer the Ramen to a mixing bowl. Add in Sesame Oil to loosen up the noodles. Set aside.
2. Fry the Bacon – In a frying pan, on medium-high heat, add in Vegetable Oil. Add the Bacon and fry until the Bacon is a bit crispy. Add in the Garlic, stir for about 15 seconds until fragrant.
3. Cook the veggies – Add in the Red Onions. Stir-fry for about 2 minutes until the Onions are a bit softened. Then add in the Kimchi. Stir well for another minute.
4. Assemble the dish – Add in the Ramen, Kimchi Juice, Sugar, Chicken Bouillon, and Ramen Water. Mix to combine well. Then add in the Sesame Oil. Mix well again.
5. Add the cheese – Add in the chopped Green Onions. Toss well. Turn down the heat to medium or medium-low. Sprinkle Shredded Cheddar Cheese on top. Then cover with a lid and let the cheese melt.
6. Ready to serve – Transfer to serving bowls. Garnish with extra chopped Green Onions or top with a Fried Egg. Ready to enjoy!

Haini’s Tips

โ€ข You are welcome to use Ramen of your choice for this recipe.
โ€ข I used mild Cheddar Cheese. You can also use sharp or extra-sharp Cheddar Cheese for a stronger taste. Either way, the flavor will be amazing.
โ€ข It is better to lower the heat at the end to avoid overcooking the noodles.

Ingredients

  • 2 packages Instant Ramen Noodles
  • 1 cup Kimchi
  • 1/3 cup / 80 ml Kimchi Juice
  • 100 g Bacon , cut in small pieces
  • 3 large Garlic Cloves, finely chopped
  • 1/2 tsp Sugar
  • 2 tsp Sesame Oil + 2 tsp extra
  • 2 tsp Vegetable Oil
  • 1/2 tsp Chicken Bouillon
  • 1 small Red Onion, diced
  • 2 Green Onions, chopped
  • 1/3 cup / 80 ml reserved Ramen Water
  • 1/4 cup Shredded Cheddar Cheese or more
