Honey Walnut Shrimp is another classic Chinese dish which is one of my childhood favorites. I remember when my parents used to take me to restaurants and we always ordered this dish during special occasions. Making this dish just brings back all the wonderful memories while growing up. I love how quick and easy this recipe is and you can simply make this at home for a regular weeknight meal or a weekend delight. This can easily become one of your family go-to recipes and it is a crowd-pleaser for both adults and kids.

The recipe takes approximately 25 minutes to make. This is perfect for a quick dinner after a busy work day or when you feel lazy about cooking. You should always use large tiger Shrimp or Prawns for a satisfying experience! Each bite is sensational – crispy juicy shrimp and candied roasted walnuts coated with a creamy and sweet honey sauce.

WHY YOU NEED TO MAKE THE CREAMY SWEET SAUCE

Japanese Kewpie Mayonnaiseย โ€“ Kewpie has both the tangy-sweetnessย and the savory undertone that is absent in regular mayonnaise. It is packed with amazing egg umami flavor. You will have to taste it to find out. ย 
Sweetened Condensed Milk – This truly helps to make a creamy, rich, and sweet sauce.
Honey – The use of honey adds additional sweetness to the flavor.
Lemon Juice – Use freshly squeezed lemon juice. This helps balance the overall flavor.

WHAT YOU NEED TO MAKE CANDIED WALNUTS

Walnuts – Buy the raw kind. Cut the walnuts in half.
Brown Sugar – This adds that nice brown color to the walnuts. You can also use white sugar.
Water – Water helps dissolve the sugar.

OTHER INGREDIENTS

Tiger Shrimp – Always use large shrimp for satisfying bites. The shrimp should be peeled and deveined.
Egg Whites – I use 3 egg whites here. You can cook the egg yolks separately for another meal.
Salt & White Pepper – The classic combo of seasonings โ€“ simple and flavorful.
Cornstarchย โ€“ It is also called Cornflour. This is commonly used in Chinese cooking.
Vegetable Oilย โ€“ I like to use Rapeseed Oil. You can use Sunflower Oil too. Do not use Olive OIl.
Green Onionsย โ€“ or called Spring Onions. I like to use this for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.

HOW TO MAKE THIS HONEY WALNUT SHRIMP RECIPE

Make the Honey Sauce – In a bowl, mix together Kewpie Mayo, Condensed Milk, Honey, and Lemon Juice. Set aside.
Prepare the Candied Walnuts – In a non-stick frying pan, on medium heat, add in Brown Sugar and Water. Stirring constantly and bring to a simmer. Once the sugar syrup thickens, quickly add in Walnuts. Mix to coat evenly. Remove from heat. Transfer Candied Walnuts one by one to parchment paper. Set aside.
Prepare the Shrimp – In a mixing bowl, add the Shrimp, then season with Salt and White Pepper. Mix well. In another large bowl, add in Egg Whites and whisk until foamy. Then add in Cornstarch and mix until you have a nice runny paste. Add in the Shrimp and mix well until the Shrimp is well coated in batter.
Fry the Shrimp – In a frying pan, on medium-high heat, add in enough Vegetable Oil for the Shrimp to float. Use wooden chopstick to check the temperature of the oil. If you see bubbles coming up quickly at the edge of the chopstick, the oil is ready (180 C / 350 F). Add the Shrimp one by one into the oil. Fry them in batches for 2-3 minutes until crispy and golden brown color. Do not overcrowd the pan. Drain excess oil on paper towel.
Assemble the dish – In a large mixing bowl, add in the crispy Shrimp, candied Walnuts, and the creamy honey sauce. Toss everything well until the Shrimp are evenly coated.
Ready to serve – Transfer to a serving plate or bowl. Garnish with some chopped Green Onions on top. Ready to enjoy!

Haini’s Tips

1. Remember to always use large Tiger Shrimp / Prawns for satisfying taste and experience.
2. I love the Brown Sugar giving the Walnuts a nice brown color, creating a contrast. You are welcome to use White Sugar as well.
3. If you can find the Japanese Kewpie Mayonnaise, I highly recommend you to use it. It just tastes so much better compared to the regular mayonnaise. But you can substitute this with the regular mayonnaise if Kewpie Mayonnaise is not an option for you.
4. Spread out the coated candied Walnuts on parchment paper as you don’t want them to stick together.
5. To keep the Shrimp crispy, you can serve the Shrimp and the Sauce separately until you are ready.

Ingredients
  

  • 20-22 large Tiger Shrimp, peeled and deveined
  • 3 Egg Whites
  • 1/4 tsp Salt
  • 1/4 tsp White Pepper
  • 1/2 cup Cornstarch

  • Green Onions for garnish, chopped

Creamy Honey Sauce

  • 1/4 cup Japanese Kewpie Mayonnaise You can also use regular mayo
  • 3 tbsp Sweetened Condensed Milk

Candied Walnuts

  • 1/2 cup Walnuts, halves
  • 3 tbsp Brown Sugar You can also use white sugar
  • 1 tbsp Water
