THE CHICKEN
I highly recommend dark meat (chicken thighs/legs) to ensure the best texture and juiciness. Chicken breasts can work but are less tasty! Whichever you choose, the magic works in the marination. The chicken should be marinated in the fridge for at least 1 hour but the flavors will be enhanced significantly when marinated for 2 hours or longer.
THE SPECIAL INGREDIENT
To make it a bit fusion, I’ve used a special ingredient in this recipe – Chinese Chili Bean Paste (Dou Ban Jiang) which I use a lot in my Sichuan recipes (f.ex. The Devil’s Mapo Tofu, A Taste of Sichuan).

Easy Baked Honey Garlic Chicken Thighs
Ingredients
- 500 g Boneless Chicken Thighs, cut in big pieces
- 1.5 tbsp Olive Oil
- 1 tbsp Light Soy Sauce
- 1.5 tbsp Honey
- 2 large Garlic Cloves, grated
- 1 tsp Ginger, grated
- 1.5 tsp Chinese Chili Bean Paste (Dou Ban Jiang)
- 1 tbsp Brown Sugar
- 1/2 tsp Cinnamon Powder
- 1.5 tbsp Dry Thyme
- 1 small Onion, diced
- 1 tbsp Cornstarch
- 2 Pinches of Salt
- 2 Pinches of Black Pepper
- some chopped Green Onions for garnish
Instructions
- In a large mixing bowl, mix together Chicken, Olive Oil, Honey, Light Soy Sauce, Garlic, Ginger, Chinese Chili Bean Paste, Brown Sugar, Cinnamon, Dry Thyme, Onion, Cornstarch, Salt, and Black Pepper.
- Cover and marinate in the fridge for 1-2 hours.
- Generously Oil a 19 cm x 28 cm baking dish on the bottom and sides.
- Pour the Chicken pieces into the baking dish. Spread evenly.
- Bake in preheated oven at 425 F (220 C) for 25-28 minutes. Then use the broiler function to broil the chicken for another 5 minutes, or until it turns nicely dark golden brown.
- Remove from the oven. Garnish with chopped Green Onions and it is ready to enjoy!
