The key ingredient is the well-known Chinese Spicy Chili Sauce โ Lao Gan Ma ่ๅนฒๅฆ! This translates to โOld Godmotherโ in English. Lao Gan Ma is my favorite among all Chili Sauces because its taste and name fills my childhood memories. While growing up, I ate this sauce so many times. Now, as a recipe creator, I use Lao Gan Ma to enhance most of my fried rice and noodle dishes.

LAO GAN MA AND INSTANT RICE NOODLES
There are different kinds of Lao Gan Ma for sale, such as Chili Oil with Black Bean, Fried Chili in Oil, and Spicy Chili Crisp. These are great, but my absolute favorite is Kohlrabi, Peanuts & Tofu in Chili Oil ่พฃไธไธๆฒน่พฃๆค. I especially love the Peanuts and Tofu for the ย extra crunchiness they provide. My favorite Instant Rice Noodles is a Thai brand โ MAMA. The noodle texture is fantastic for such a convenient instant noodle.
VEGETABLES
In this recipe, I use the combination of Lettuce and dried Tofu. For stir-fry, you are always encouraged to add other veggies of your choice, such as Carrot or Shiitake Mushroom.

Easy Lao Gan Ma Stir-fry Instant Rice Noodles
Ingredients
- 2 portions of Instant Rice Noodles
- 4 tbsp Lao Gan Ma Chili Sauce (with Peanuts & Tofu)
- 4 Eggs
- 2 tbsp Light Soy Sauce
- 2 tbsp Sriracha Chili Sauce
- 150 g Lettuce, cut in thin strips
- 80 g dried Tofu, cut in thin strips
- some chopped Green Onions for garnish
- some Sesame Seeds for garnish
Instructions
- In a bowl, soak the Instant Rice Noodles with boiling water for 2 minutes according to the package instruction. Then rinse in cold water and drain. Set aside.
- In a bowl, whisk 4 Eggs well.
- In a frying pan or wok, add in Lao Gan Ma Chili Sauce, on medium-high heat. When it starts bubbling, pour in the Eggs. Let sit for 30 seconds before scrambling them.
- Then add in the dried Tofu and stir for about half a minute. Add in the Lettuce. Continue to stir for another 30 seconds.
- Turn the heat down to medium-low. Add in the Instant Rice Noodle. Then add in Light Soy Sauce and Sriracha Chili Sauce. Use chopsticks to mix well.
- Turn the heat up to medium-high again. Combine everything well.
- Remove from heat and transfer to serving bowls. Garnish with chopped Green Onions and Sesame Seeds. Ready to enjoy!

Hi Lily, yes of course. You can add Chicken. I suggest you cook the Chicken separately before stir frying with the noodles.
