LAO GAN MA CHILI SAUCE

THE RICE

As you might have learned from other Chinese Cooks, it is better to use one-day old rice to make the perfect fried rice dishes. However, if you don’t have leftover rice, it’s perfectly fine to cook the rice during the day and let it cool down before cooking. This is what I normally do. I use Jasmine Rice.

HOW TO MAKE THIS LAO GAN MA SHRIMP FRIED RICE

1. Kog risene – Cook the Jasmine Rice on medium high – medium – low for about 15 minutes until the rice is well cooked. Transfer the cooked rice to a large bowl and set aside to let it cool down.
2. Prepare other ingredients – In a small bowl, whisk the Eggs well.
3. Cook the Shrimp – In a wok, add the Vegetable Oil, on medium-high heat, add in the Garlic. Stir for about 20 seconds until fragrant. Then add in the Shrimp. Add a Pinch of Salt. Cook the Shrimp for 2-3 minutes until nicely pink.
4. Cook the Eggs – Pour in the Eggs. Let sit for 30 seconds. Then scramble and stir-fry with the Shrimp for about 1-2 minutes.
5. Samle retten – Add in the cooked Jasmine Rice. Gently mix well. Add the Light Soy Sauce, Oyster Sauce, and Sugar. Mix well again. Then add in the Lao Gan Ma and mix well. Add in chopped Green Onions and combine thoroughly.
6. Klar til servering – Transfer to serving bowls. Garnish with more chopped Green Onions. Ready to enjoy!

Remember to always rinse the rice 2-3 times to eliminate extra starch before cooking. When frying the rice, it’s important to keep your heat on medium-high and keep stirring.

Ingredienser

  • 3 cups kogte Jasminris eller 1 cup unkogte Jasminris
  • 14 store Rejer, pillede og deveirede
  • 2 tbsp Vegetabilsk olie
  • 6 store Hvidløgsfed, finthakket
  • Pinch of Salt
  • 2 large Eggs, whisked
  • 2 tbsp Lys sojasovs
  • 1 tbsp Østers sovs
  • 2 tbsp Lao Gan Ma, Chinese Spicy Sauce (Chicken Flavor Chili Oil with Tofu)
  • 1 tsk Sukker
  • 3 Forårsløg, hakket
