WHAT YOU NEED TO MAKE THE HONEY SAUCE
Chicken Bouillon โ You can easily buy this in regular grocery store. In Denmark, this is sold in cubes in a package.
Water โ Water here helps with the consistency of the honey sauce.
Chinese Cooking Wine โ I normally use Shaoxing Wine. You should be able to find this in most Asian grocery stores.
Rice Vinegar โ This is also commonly used in Asian cooking. If you canโt find Rice Vinegar, you can try using Chinese White Vinegar or regular White Vinegar.
Light Soy Sauce โ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this.
Honey โ This is must-have for the Honey Sauce. Any kind of Honey should work.
Brown Sugar โ I prefer this better to regular White Sugar. If you donโt have Brown Sugar, you can use White Sugar.
Vegetable Oil โ I love using this for frying. I normally use Rapeseed Oil. Do not use Olive Oil.
Garlic โ It provides a wonderful garlicky flavor.
OTHER INGREDIENTS
Chicken Leg Meat โ I love the juicy chicken leg meat for this recipe. You can also use chicken thighs or breast.
Chinese Cooking Wine โ This is also commonly used in marinating meat in Asian cooking.
Light Soy Sauce โ This is normally used in marinade as well, which helps enhances the flavor.
Egg White โ This is a secret in Asian cooking when it comes to marinating meat.
All-purpose Flour โ We need this for the batter. This is the most commonly used type of flour, a mid-strength, medium-gluten flour, which normally has 10 to 12 percent of protein.
Cornstarch โ We use this for both the batter and the starch water. Cornstarch is widely used in Asian cooking. It is also called corn flour.
Green Onions โ or called Spring Onions. This is great for garnishing the dish at the end.
Sesame Seeds โ use the roasted kind. I also love this for garnishing the dish.
HOW TO MAKE CHINESE CRISPY HONEY CHICKEN?
1. Marinate the Chicken โ In a large mixing bowl, mix together Chicken, Chinese Cooking Wine, Light Soy Sauce, and Egg White. Set aside to marinate for 10 โ 15 minutes.
2. Make the Honey Sauce โ In another bowl, combine Chicken Bouillon, Water, Chinese Cooking Wine, Rice Vinegar, Light Soy Sauce, Honey, and Brown Sugar. Set aside.
3. Prepare the batter โ In another large bowl, add in All-purpose Flour and Cornstarch, mix well. Then add in the Chicken pieces and the marinade. Use your hand to mix well the flour and the chicken to create an uneven coating. Shake off extra flour.
4. Fry the Chicken โ In a wok, add in enough Oil for the Chicken pieces to float, on medium-high heat. Add the Chicken pieces one at a time into the hot oil. Fry the chicken in batches. Cook for 3-4 minutes until golden and cooked through. Drain on paper towel or a wire wrack.
5. Cook the Honey Sauce โ In a clean wok, add in the Vegetable Oil, on medium heat. Add the Garlic, and cook for about 15 seconds until fragrant. Then add the Honey Sauce mixture. Cook for 2-3 minutes until the Sugar has dissolved and the sauce starts to boil.
6. Assemble the dish โ Add in the Starch Water. Cook for 1-2 minutes until the sauce has thickened up slightly. Add in the fried Chicken pieces and toss well with the sauce. Make sure to coat the sauce evenly.
7. Ready to serve โ Transfer to a serving plate or bowl. Drizzle with some extra Honey Sauce on top. Sprinkle with some chopped Green Onions and toasted Sesame Seeds. Ready to enjoy!
