Fusion noodles have been a part of my cooking DNA. I love the combination of different cuisines to create the best possible flavor. The savory, sweet, and earthy taste of Miso – the umami flavor – has taken this noodle dish to the next level. I have several versions of Carbonara. MISO
Miso means “fermented beans” in Japanese. This is a traditional ingredient in both Japanese and Chinese cuisines. Miso paste is made from fermented soybeans and grains, which contain tons of beneficial bacteria.
The Miso paste can be used in all sorts of dishes, including soups or broths, salad dressings, vegetables, stews, glazes and marinades. Miso is rich in vitamins and minerals, as well as probiotics. Benefits of Miso may include providing protective antioxidants, supporting immune function and brain health, and promoting gut and heart health.
INGREDIENTS
Ramen Noodles – I use Korean Kimchi Ramen Noodles here. You can use other ramen noodles of your choice.
Bacon – Either kind of Bacon should work. Buy the regular kind from your local supermarkets.
Eggs – I use 2 large whole Eggs here. Remember to have the Eggs in room temperature.
Miso Paste – I use the Red Miso Paste here. You can also use the White Miso Paste. You can buy this in your local Asian store.
Parmesan Cheese – Remember to grate the Parmesan Cheese before mixing with the egg mixture.
Olive Oil – I love using Extra Virgin Olive Oil. Regular Olive Oil can work as well.
Salt & Black Pepper – The classic combo of seasonings that you must have!
Green Onions – I cut some Green Onions for garnish. The nice green color looks good for the finished dish.
Sesame Seeds – You can use either White or Black Sesame Seeds for garnish. Or use a blend of different Sesame Seeds.
HOW TO MAKE THIS MISO CARBONARA NOODLES
1. Prepare the Miso Egg mixture – In a large mixing bowl, mix together Eggs, Parmesan Cheese, Miso Paste, Black Pepper, and Salt. Set aside.
2. Fry the Bacon – In a frying pan, add the Olive Oil, on medium-high heat. Add the Bacon. Cook the Bacon until crispy. Turn off the heat and sit on the stovetop.
3. Cook the Noodles – In a pot, cook the Ramen Noodles in boiling water for 1-2 minutes until just cooked but still a little firm. Drain the noodles and reserve some of the cooking water.
4. Mix the Bacon with Noodles – Transfer the Ramen Noodles into the pan, on low heat. Coat well with the Bacon for 1-2 minutes.
5. Assemble the dish – Add the Miso Egg mixture and toss well with the noodles. Keep the heat really low or off. Add some reserved cooking water to get to a nice consistency.
6. Ready to serve – Transfer to serving plates or bowls. Before serving, sprinkle extra Black Pepper, grated Parmesan Cheese, chopped Green Onions, and some Sesame Seeds for garnish. Serve right away!
