There are certain dishes that instantly take me back to my childhood, and this Shrimp Fried Rice Noodles is one of them. Itโs the kind of meal that showed up on the table on busy daysโquick, comforting, and made with whatever was already in the kitchen. No fuss, no measuring cups, just good instincts and familiar flavors.
Growing up, rice noodles were a staple in my home. Chewy vermicelli noodles tossed with eggs, shrimp, and crisp vegetables were always a guaranteed crowd-pleaser. The aroma aloneโsoy sauce hitting a hot pan, eggs softly scrambling, shrimp turning pinkโstill makes me feel grounded and at ease.
WHY YOU WILL LOVE THIS RECIPE

A LITTLE MEMORY FROM MY KITCHEN
Every time I make this dish, Iโm reminded of standing near the stove as a kid, watching noodles being tossed in a wok while steam filled the kitchen. It wasnโt just about eatingโit was about warmth, care, and the comfort of familiar flavors.
Now, I love recreating this recipe in my own kitchen, keeping it just as simple as I remember, while sharing it with you here. Some dishes donโt need upgradingโthey just need to be remembered.
INGREDIENTS
Vermicelliย โ There are many kinds of Vermicelli that you can choose from. Either kind should work. I love using both the Chinese and the Vietnamese rice noodles brands.
Tiger Shrimpย โ Always use large shrimp for satisfying bites. The shrimp should be peeled and deveined.
Eggsย โ I use two large eggs in this recipe. Eggs are must-have for this classic Chinese Fried Rice Noodles dish.
Vegetable Oilย โ I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Bean Spoutsย โ This goes perfectly with the fried rice noodles. We love using Bean Spouts in Chinese cooking.
Lettuceย โ You can use different kind of lettuce. The soft kind works the best.
Green Onionsย โ or called Spring Onions. It adds beautiful green color and it is rich in healthy nutrients.
Light Soy Sauceย โ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Oyster Sauceย โ You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Dark Soy Sauceย โ This is normally used to add a nice color to the dish in Chinese cooking. I also use Lee Kum Kee brand.
Chili Flakesย โ This adds a bit extra spicy tang! You can skip this if don’t want the spiciness.ย
Salt & Black Pepperย โ The classic combo of seasoning that makes everything tastes better!
HOW TO MAKE THIS SHRIMP FRIED RICE NOODLES RECIPE
Prepare the ingredientsย โ Whisk the Eggs in a bowl. Cut the veggies. Set aside.
Cook the Rice Noodlesย โ Steam a wok of water on medium-high heat. When the water starts steaming, add in the dried Vermicelli. Steam for a few minutes until the noodles open up. The noodles should still be firm, not soft. Then drain and transfer to a large bowl.
Prepare the Rice Noodlesย โ Cover the bowl with a lid and let sit for 10 minutes. After 5 minutes, open the lid and flip the noodles. Then cover and sit for another 5 minutes. Once done, add in the Darkย Soy Sauceย and mix well. This helps the noodles to get a nice color. Use scissors to cut the noodles to make it shorter if necessary.
Fry the Shrimp โ In a wok, add in 1 tbsp Vegetable Oil, over meidum-high heat. Add in the Shrimp. Fry on both sides until nicely golden. Season with Salt and Pepper. Transfer to a bowl and set aside.
Cook the Eggsย โ In the same wok, add in 1 tbsp Vegetable Oil, on medium-high heat. Pour in the Eggs. Stir fry until the Eggs are half cooked. Transfer to a bowl and set aside.
Assemble the dishย โ In the same wok, add in 2 tbsp Vegetable Oil, on medium-high heat. Add in the Rice Noodles. Stir fry for 1-2 minutes. Then add in the Eggs and Bean Spouts. Keep stirring. Then add in the Lettuce, Green Onions, and Shrimp. Add in the seasoning sauces: Light Soy Sauce and Oyster Sauce. Combine everything well. Add in Chili Flakes. Cook for another minute or two. Turn off the heat. Add in Black Pepper. Stir well again.
Ready to serveย โ Transfer to serving plates. Sprinkle more Black Pepper on top as desired. Ready to enjoy!
HAINI’S TIPS
1. It is important not to steam the rice noodles too long in the wok. The noodles are supposed to be still firm after steaming in the wok. The resting process in a bowl with the lid will continue to cook the rice noodles. In this way, the rice noodles can maintain the chewy texture when stir-frying. 2. Remember to always use large shrimp for satisfying bites. 3. Adding Dark Soy Sauce into the noodles before cooking helps to add that nice brown color to the noodles. It helps to reduce the time in stir-frying. 4. You can use other veggies of your choice, such as bok choy or carrots.
