This Spicy Shrimp Chow Mein Noodles is an absolute comfort food. It has amazing flavours and wonderful textures. It is also simple and easy to make.
Spicy Shrimp Chow Mein Noodles

Spicy Shrimp Chow Mein Noodles is a must-try! It has amazing flavors and wonderful textures. This stir-fried noodles are filled with large bites of Shrimp, bouncy noodles, and healthy veggies. I can eat so much. It is super satisfying and comforting. I always love Shrimp in my noodles. But Chicken will also be great in this recipe.

If you have already tried Chow Mein in Chinese restaurants, it is time for you to make them at home. It is simple and easy to make. I am sure you will love it so much more than takeouts. If you are also a big fan of stir-fry noodles with Shrimp, I recommend you to try out my Stir-fry Soy Sauce Shrimp Glass Noodles, and Sichuan Kung Pao Shrimp Noodles.

For the vegetables, I like to use Carrot, Cabbage, and Green Onions. You can also add Bean Sprouts and Snow Peas. The key is to use different kind of veggies to create a beautiful color.

WHAT YOU NEED TO MAKE THE CHOW MEIN SAUCE

Oyster Sauceย โ€“ You should definitely add this to your kitchen. Oyster Sauce adds a great hint of sweetness and a rich savoriness to the dish. I like to use Thai brand, such as Maekrua for this sauce.
Light Soy Sauceย โ€“ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Waterย โ€“ Water here helps with the consistency of the sauce.
Chicken Bouillonย โ€“ You can easily buy this in regular grocery store. In Denmark, this is sold in cubes in a package.
Sugarย โ€“ You can just use regular white sugar here. It helps balance the overall taste of the chow mein sauce.
Cornstarchย โ€“ Cornstarch is widely used in Asian cooking. It is also called corn flour.

MARINADE

Salt & Black Pepper – The combination of Salt & Black Pepper is perfect seasoning and it’s great for marinating the shrimp.
Chinese Cooking Wineย โ€“ I normally use Shaoxing Wine. You should be able to find this in most Asian grocery stores. This is commonly used in Asian cooking for marination.

OTHER INGREDIENTS

Shrimpย โ€“ Always use large shrimp for satisfying bites. The shrimp should be peeled and deveined with tails intact.
Spaghetti Noodles – I love to use Spaghetti in this recipe. You can also use Egg Noodles. In fact, Instant Noodles and Rice Noodles can work too.
Thai Red Chilies – The fresh Thai Red Chilies add a nice spicy tang to the taste.
Garlic & Ginger – These two are the best friends here with refreshing tastes.
Carrot – It’s best to julienne the carrot here. You can also cut it in thin strips.
Cabbage – Cabbage is so delicious with a nice crunchy texture.
Vegetable Oilย – I normally use Rapeseed Oil. You can also try Sunflower Oil. Do not use Olive Oil.
Green Onionsย – or called Spring Onions. This is a key ingredient for making the pancake. It adds beautiful green color and it is rich in healthy nutrients.
Sesame Oil – It has a special flavor and aroma. This is normally used as a finishing oil, which can elevate the flavor and add a delightful richness.
Lao Gan Ma Crispy Chili Oilย โ€“ This is one of the most popular Chinese chili sauces. You can buy this chili sauce in your local Asian markets or grocery stores.

HOW TO MAKE THIS SHRIMP CHOW MEIN NOODLES

1. Marinate the Shrimp – In a bowl, mix together Shrimp, Salt, Black Pepper, and Chinese Cooking Wine. Set aside to marinate.
2. Prepare the Chow Mein Sauce – In a bowl, mix together Oyster Sauce, Light Soy Sauce, Sugar, Water, Chicken Bouillon, and Cornstarch. Set aside.
3. Cook the Noodles – Cook the Spaghetti Noodles in a pot of boiling water until al dente according to the package instruction. Drain and set aside.
4. Fry the Shrimp – Heat the wok over high heat. When the wok is smoking hot, add in 1 tbsp Vegetable Oil and the Shrimp. Spread the Shrimp evenly and let them sear for a minute. Flip them over and sear for another minute. Remove and transfer the Shrimp to a bowl.
5. Assemble the dish – In the same wok, on medium-high heat, add in 2 tbsp Vegetable Oil. Then add the Garlic, Ginger, and Thai Red Chilies. Stir fry for 15 seconds until fragrant. Add the Carrot and Cabbage. Stir fry for 2 minutes until soften. Then add in the Green Onions and cook for another 30 seconds. Add the Noodles and Chow Mein Sauce. Combine everything well. Add in Sesame Oil, cooked Shrimp, and Green Onions. Toss well.
6. Ready to serve – Transfer to serving plates or bowls. Garnish with more Green Onions and drizzle with some Lao Gan Ma Crispy Chill Oil on top. Ready to enjoy!

Haini’s Tips

I love to use Spaghetti in this recipe. You can also use Egg Noodles. In fact, Instant Noodles and Rice Noodles can work too. If you prefer less spiciness, you can skip the last step of adding the Lao Gan Ma Crispy Chill Oil. Otherwise, do not skip.

Ingredients
  

  • 3 tbsp Vegetable Oil
  • 14-16 large Shrimp, peeled and deveined, tails intact
  • 250 g Spaghetti Noodles
  • 2 Thai Red Chilies, finely chopped
  • 3 large Garlic Cloves, finely chopped
  • 1/2 tbsp Ginger, finely sliced
  • 1/2 Carrot, julienned
  • 2 cups Cabbage, shredded
  • 2 Green Onions, sliced
  • 1 tsp Sesame Oil
  • 2 tsp Lao Gan Ma Crispy Chili Oil

Marinade

  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tbsp Chinese Cooking Wine

Chow Mein Sauce

  • 2 tbsp Oyster Sauce
  • 2 tbsp Light Soy Sauce
  • 1/2 cup Water
  • 1/2 Chicken Bouillon
  • 1 tsp Sugar
  • 2 tsp Cornstarch

Instructions
 

  • In a bowl, mix together Shrimp, Salt, Black Pepper, and Chinese Cooking Wine. Set aside to marinate.
