My Garlic Shrimp Chili Oil Ramen is an upgraded version of instant Ramen noodles. You can make this into a full wonderful meal. It only takes 15 minutes to make! And this is perfect for a quick meal at any time of the day.
Shrimpย โ Always use large shrimp for satisfying bites. The shrimp should be peeled and deveined and are cut in half lengthways.
Instant Ramen Noodles – I use Korean Shin Ramens here. You can use any kind of Instant Ramen.
Vegetable Oilย โ I normally use Rapeseed Oil. You can also try Sunflower Oil.
Lao Gan Ma Crispy Chili Oilย โ This is one of the most popular Chinese chili sauces worldwide. You can buy this chili sauce in your local Asian markets or grocery stores.
Light Soy Sauceย โ This is one of the must-have Asian sauces that you need to have in your kitchen. Lee Kum Kee is my favorite brand for this. You can use other brands too.
Dark Soy Sauce – This is normally used to add a deep color to the dish. I also use Lee Kum Kee brand for this.
Green Onionsย โ or called Spring Onions. This is great for garnishing at the end. It adds beautiful green color and it is rich in healthy nutrients.
Garlicย โ It adds a wonderful garlicky flavor. In my view, garlic just makes everything better.
Sesame Seedsย โ use the roasted kind. I also love this for garnishing the dish.
Chinese Black Vinegar – or called ้ๆฑ้ฆ้. This isย made from fermented black sticky rice or regular glutinous rice.ย
Coriander – or called cilantro. This adds a special aroma and taste to the dish. It is refreshing with a lemony or lime-like flavor.
HOW TO MAKE THIS GARLIC SHRIMP CHILI OIL RAMEN
1. Cook the Shrimp – In a wok, on medium-high heat, add in Vegetable Oil. Add in the Garlic. Stir for 15 seconds until fragrant. Then add in the Shrimp. Cook for 2-3 minutes until just cooked.
2. Cook the Chili Sauce – Add in toasted Sesame Seeds and Lao Gan Ma Crispy Chili Oil. Stir well. Then add in the Light Soy Sauce and Dark Soy Sauce. Continue to stir well and the Shrimp are cooked. Turn the heat off. Add in Coriander, Green Onions, and Chinese Black Vinegar. Combine well. Set aside
3. Cook the Ramen – Cook the Ramen noodles in boiling water until just tender.
4. Assemble the dish – Transfer the Ramen into the wok directly. Turn the heat up to high. Toss everything well until the sauce thickens.
5. Ready to serve – Transfer to a bowl. Sprinkle with extra toasted Sesame Seeds and chopped Green Onions. Ready to enjoy!
Haini’s Tips
โข You can use Ramen of your choice. I recommend using Korean instant Ramen noodles. I believe Spaghetti will also work well with this recipe. โข Remember not to overcook the Ramen noodles. โข For vegetarians, you can also substitute Shrimp with Tofu. If you use Tofu, I recommend using Firm Tofu. It is best to fry the Tofu first before mixing with the noodles.

12-14large Shrimp, peeled & deveined, cut in half lengthways
2packages of instant Ramen noodles
3tbspVegetable Oil
6Garlic Cloves, chopped
1tbsptoasted Sesame Seeds
3tbspLao Gan Ma Crispy Chili Oil
2tbspLight Soy Sauce
1tspDark Soy Sauce
20g/ 1 cup Coriander, roughly chopped
3Green Onions, sliced
1tbsp Chinese Black Vinegar
extra toasted Sesame Seeds for garnish
extra chopped Green Onions for garnish
Instructions
In a wok, on medium-high heat, add in Vegetable Oil. Add in the Garlic. Stir for 15 seconds until fragrant. Then add in the Shrimp. Cook for 2-3 minutes until just cooked.
Add in toasted Sesame Seeds and Lao Gan Ma Crispy Chili Oil. Stir well. Then add in the Light Soy Sauce and Dark Soy Sauce. Continue to stir well and the Shrimp are cooked. Turn the heat off.
Add in Coriander, Green Onions, and Chinese Black Vinegar. Combine well. Set aside.
Cook the Ramen noodles in boiling water until just tender. Transfer the Ramen into the wok directly. Turn the heat up to high. Toss everything well until the sauce thickens.
