Black pepper udon has always been one of my childhood favorites. I grew up loving dishes that were simple yet full of character, and this one has stayed close to my heart over the years. Every time I make it, the smell of freshly cracked black pepper takes me right back — to warm kitchens, quick meals, and that comforting feeling of something familiar and loved.

INGREDIENSER
Udon nudler – Dette er en af de mest populære nudler i asiatisk madlavning. Du kan købe dette fra de fleste asiatiske dagligvarebutikker. Dine lokale butikker vil sandsynligvis også have dette.
Tigerrejer - Brug altid store rejer for at få tilfredsstillende bidder. Rejerne skal pilles og udbenes.
Salat – I like adding lettuce to my stir-fry noodles. You can also add Bok Choy or other green leaves vegetables.
Vegetabilsk olie - Jeg kan godt lide at bruge rapsolie. Du kan også bruge solsikkeolie. Brug ikke olivenolie.
Hvidløg – It provides a wonderful garlicky flavor
Grønne løg - eller kaldet forårsløg. Jeg kan godt lide at bruge dem som pynt til sidst. Det giver en smuk grøn farve, og det er rigt på sunde næringsstoffer.
Salt og sort peber – The classic combo of seasoning that makes everything tastes better!
BLACK PEPPER SAUCE
Østers sovs - Du bør helt sikkert tilføje den til dit køkken. Østerssauce tilfører retten et godt strejf af sødme og en fyldig smag. Jeg kan godt lide at bruge thailandske mærker som Maekrua til denne sauce.
Mørk sojasovs – This is normally used to add a deep color to the dish
Lys sojasovs – Dette er en af de musthave asiatiske saucer, som du skal have i dit køkken. Lee Kum Kee er mit yndlingsmærke til dette. Du kan også bruge andre mærker.
Kinesisk Sort Eddike – or called 镇江香醋. This is made from fermented black sticky rice or regular glutinous rice.
Sort peber – The hero seasoning in the sauce.
Sesamolie – It adds a unique flavor to the dish. We love to use this to add additional aroma to the dish in Asian cooking.
Majsstivelse - Majsstivelse er meget brugt i asiatisk madlavning. Det kaldes også majsmel.
Water & Chicken Bouillon – This helps make a chicken stock. You can also just use chicken stock.
HOW TO MAKE THIS BLACK PEPPER SHRIMP UDON
Prepare the Black Pepper Sauce – In a small bow, combine together Oyster Sauce, Dark Soy Sauce, Light Soy Sauce, Chinese Black Vinegar, Sesame Oil, Black Pepper, Cornstarch, Water, and Chicken Bouillon. Mix well and set aside.
Steg rejerne – In a frying pan, add in 1 tbsp of Vegetable Oil, on medium-high heat. Fry the Shrimp on both sides until nicely golden. Season with Salt & Black Pepper.
Kog Udon nudler – Boil a pot of water. Cook the Udon noodles for 1 minute until loosen up. Drain and set it aside.
Samle retten – In a wok, add in Vegetable Oil, on medium-high heat. Add in the Garlic, and stir for 15 seconds until fragrant. Then add in Udon noodles and the Black Pepper Sauce. Mix well and cook until the sauce has slightly thickened. Toss in Lettuce and cook until they are softened. Toss in the Shrimp and stir for another 30 seconds.
Klar til servering – Transfer to serving plates or bowls. Garnish with chopped Green Onions on top. Ready to enjoy!
HAINIS TIPS
1. You can substitute Shrimp with Beef or Chicken if you prefer other meat options. For a vegetarian version, you can use Tofu instead. 2. If you don’t have Chicken Bouillon, you can just use Chicken stock. Replace Water and Chicken Bouillon with 1/4 cup of Chicken stock. 3. For the Greens, I use Lettuce here, you can also use Bok Choy or other green-leaf vegetables. 4. If Chinese Black Vinegar is not available, you can substitute with Balsamic Vinegar.
