Beef is one of the essential courses required on a Chinese dining table. I am sure many of you must have tried Sizzling Beef or some other kind of Beef dishes in Chinese restaurants. What about Stir-Fry Beef with Green Peppers? My favorite!

We should try to reduce the amount of beef in our diets. This Stir-Fry Beef with Green Peppers is a good way to enjoy beef without the heaviness associated with beef. How to handle the Beef?

Be sure always to clean the beef after you take it out of the package. It’s very important to handle the beef properly before you cook it because handling always affects the taste and texture of the beef. Certainly, there are many ways to do it. The method I use for cleaning and marinating the beef is written in the recipe below. Cleaning involves more steps but makes for a better dish, as you will agree if you try this method. An alternative is to soak the beef in salted water for about 15 minutes. Then wash it in clean water afterwards. The salted water helps to get rid of excess blood and provides a better taste.

Sauces

Some sauces are key to maximizing the real taste of the beef. For example, I recommend Chinese Cooking Wine, Dark Soy Sauce, Light Soy Sauce, Hoisin Sauce, and Oyster Sauce. These sauces are widely available, and always available in your local Asian grocery stores.

Ingredienser

  • 400 g / 14 oz Beef – Sirloin or Tenderloin (Cut into slices)
  • 20 g / 0.7 oz Ginger, minced
  • 4 Fed hvidløg, hakket
  • 1 Green Bell Pepper
  • 2 Red Chilies
  • 3 Grønne løg
  • One half of a large Onion
  • 2 tbsp Hoisin Sauce
  • 1 tbsp Østers sovs

Marinade Sauce

  • 1/4 tsk Salt
  • 1/4 tsk Sort Peber
  • 1 tsk Mørk sojasovs
  • 1 Æggehvide
  • 1 tbsp Majsstivelse
  • 1 tbsp Vegetabilsk olie

The Beef Sauce

  • 1 tbsp Seasoned Soy Sauce for Seafood
  • 1 tbsp Kinesisk madlavningsvin
  • 1/4 tsk Salt
  • 1/4 tsk Sort Peber
  • 1 tsk Majsstivelse

Sådan gør du

  • Cut the beef in thin slices and place into a large bowl. Clean the beef for 1-2 minutes (I use my hands) and then drain.
  • Marinate the beef in a big bowl. Add Salt, Ground Black Pepper, and Dark Soy Sauce. Use one hand to massage the beef in a circular direction for about 2 minutes until sticky. Add an Egg White, massage in a circle again.
  • Add the Cornstarch. Mix well, then add some Vegetable Oil and mix well again. Set aside the beef mixture.
  • Prepare Ginger, Garlic, Green Bell Pepper, Onion, Green Onions, and Red Chilies. Set aside.
  • Prepare the Beef Sauce. In a medium bowl, mix Seasoned Soy Sauce for Seafood, Chinese Cooking Wine, Salt, Ground Black Pepper, and Cornstarch together. Set aside.
  • Heat up the wok to medium high. Add a couple of tablespoons of Oil. Put in beef and fry for about 2 to 3 minutes, until the beef is around 70% cooked. Then set aside.
  • In the same wok on high, add 2 tablespoons of Oil. Add Ginger, Garlic, and Red Chilies. Stir-fry for about 10 seconds, then add Green Peppers and Onions, stirring well. Add the Hoisin Sauce and Oyster Sauce.
  • Add the beef, stir for a minute, and add the Beef Sauce. Keep stirring until the beef and the sauces are well coated. Serve while hot!

Noter

  • It’s important to clean and massage the beef in the beginning as the beef will taste more tender.
  • Be sure to use some Vegetable Oil for marinating the beef to keep the beef from sticking to the wok while cooking.
  • Do not overcook the beef initially. Remove from wok when the color has just changed to brown. 
  • If you cannot find Seasoned Soy Sauce for Seafood, you can just use regular Soy Sauce as substitution.
