INGREDIENSER

SALT & PEPPER MIX

Sichuan peberkorn – This is known for its numbing sensation. You can buy Sichuan Peppercorns in your local Asian grocery stores.
Sorte peberkorn – This is commonly used in our daily cooking.
Havsalt – I love SeaSalt flakes. You can also use other kind.

ANDRE INGREDIENSER

Jasminris - Det er min yndlingsris. Du kan også bruge basmatiris. Jeg elsker at koge mine ris samme dag, som jeg laver de stegte ris. Hvis du har en rest ris, er det også godt!
Rester af kylling – I normally have chicken breast leftover, which is what I use for this recipe. If you also have chicken leg meat leftover, it is even better.
Æg – I use two eggs in this recipe. Eggs are must-have for a good and classic Chinese fried rice.
Lys sojasovs – Dette er en af de musthave asiatiske saucer, som du skal have i dit køkken. Lee Kum Kee er mit yndlingsmærke til dette. Du kan også bruge andre mærker.
Sukker - Du vil måske blive overrasket over, hvor godt det er at tilsætte sukker i de stegte ris. Karamelliseringen gør bare de stegte ris ekstra lækre.
Vegetabilsk olie – Jeg elsker at bruge denne til stegning. Jeg bruger normalt rapsolie. Du kan også prøve solsikkeolie. Brug ikke olivenolie.
Grønne løg – eller kaldet Forårsløg. Det er fantastisk til pynt til sidst. Den tilføjer en smuk grøn farve, og den er rig på sunde næringsstoffer.
Hvidløg – Garlic always adds a magic garlicky flavor.

HOW TO MAKE THIS SALT & PEPPER CHICKEN FRIED RICE RECIPE

1. Shred the Chicken: Use your hands to shred the leftover Chicken breast into pieces. Add to a bowl and set aside.
2. Forbered æggene: In a small bowl, whisk the Eggs well. Set aside.
3. Make the Salt & Pepper Mix: In a frying pan, toast Sichuan Peppercorns and Black Peppercorns on medium heat for about 1 minute until fragrant. Then use a Mortar and Pestle to grind the Peppercorns. Transfer to another bowl. Add in the Sea Salt. Mix well. Salt and Pepper Mix is ready. Set aside.
4. Kog æggene: In a wok, add the Vegetable Oil, on medium-high heat. Add in the Garlic. Stir for about 15 seconds until fragrant. Then add in the Eggs. Let sit for 20 seconds before scrambling the Eggs. Then add in the Chicken. Sprinkle some Salt & Pepper Mix. Stir well.
5. Samle retten: Then add in the leftover Jasmine Rice. Gently mix well. Add in Light Soy Sauce and Sugar. Mix well again. Add in chopped Green Onions and more Salt & Pepper mix. Combine thoroughly.
6. Klar til servering: Transfer to serving bowls. Garnish with more Green Onions and Salt & Pepper Mix as desired. Ready to enjoy!

HAINIS TIPS

– Remember to use your hands to shred the Chicken breast into pieces. Your hands are your best friends here. You can taste the difference between hand-shredded chicken and machine-shredded chicken.
– If you have any leftover fried rice, you can easily warm it up in the microwave the next day and it will still taste amazing!
– There will be some leftover Salt and Pepper Mix. Reserve it in a container and use it for other dishes as you desire. Do not waste it. Once you taste this spice you will use it often.

Ingredienser
  

  • 300 g / 10,6 oz rester af kyllingebryst, strimlet
  • 3 kopper cooked/leftover Jasmine Rice or 1 cup uncooked Jasmine Rice
  • 6 store Hvidløgsfed, finthakket
  • 2 Spsk. Vegetabilsk olie
  • 2 store æg, pisket
  • 2 Spsk. Lys sojasovs
  • 1/2 tsk Sukker
  • 3 Forårsløg, finthakket

Salt- og peberblanding

  • 1 Spsk. Sichuan peberkorn
  • 1 Spsk. Sorte peberkorn
  • 1 Spsk. Havsalt

Sådan gør du
 

  • Brug hænderne til at rive den resterende kyllingebryst i stykker. Tilføj til en skål og stil til side.
  • In a small bowl, whisk the Eggs well. Set aside.
  • Rist sichuanpeberkorn og sorte peberkorn på en pande ved middel varme i ca. 1 minut, indtil de dufter. Brug derefter en morter og en støder til at male peberkornene. Overfør til en anden skål.
  • Tilsæt havsalt. Bland det godt. Salt- og peberblandingen er klar. Sæt den til side.
