Growing up, rice noodles were a staple in my home. Chewy vermicelli noodles tossed with eggs, shrimp, and crisp vegetables were always a guaranteed crowd-pleaser. The aroma alone—soy sauce hitting a hot pan, eggs softly scrambling, shrimp turning pink—still makes me feel grounded and at ease.

Every time I make this dish, I’m reminded of standing near the stove as a kid, watching noodles being tossed in a wok while steam filled the kitchen. It wasn’t just about eating—it was about warmth, care, and the comfort of familiar flavors.
Now, I love recreating this recipe in my own kitchen, keeping it just as simple as I remember, while sharing it with you here. Some dishes don’t need upgrading—they just need to be remembered.
INGREDIENSER
Vermicelli – There are many kinds of Vermicelli that you can choose from. Either kind should work. I love using both the Chinese and the Vietnamese rice noodles brands.
Tigerrejer - Brug altid store rejer for at få tilfredsstillende bidder. Rejerne skal pilles og udbenes.
Æg – I use two large eggs in this recipe. Eggs are must-have for this classic Chinese Fried Rice Noodles dish.
Vegetabilsk olie - Jeg bruger normalt rapsolie. Du kan også prøve solsikkeolie. Brug ikke olivenolie.
Bønnespirer – This goes perfectly with the fried rice noodles. We love using Bean Spouts in Chinese cooking.
Salat – You can use different kind of lettuce. The soft kind works the best.
Grønne løg - eller kaldet forårsløg. Det giver en smuk grøn farve, og det er rigt på sunde næringsstoffer.
Lys sojasovs – Dette er en af de musthave asiatiske saucer, som du skal have i dit køkken. Lee Kum Kee er mit yndlingsmærke til dette. Du kan også bruge andre mærker.
Østers sovs - Du bør helt sikkert tilføje den til dit køkken. Østerssauce tilfører retten et godt strejf af sødme og en fyldig smag. Jeg kan godt lide at bruge thailandske mærker som Maekrua til denne sauce.
Mørk sojasovs – This is normally used to add a nice color to the dish in Chinese cooking. I also use Lee Kum Kee brand.
Chiliflager – This adds a bit extra spicy tang! You can skip this if don’t want the spiciness.
Salt og sort peber – The classic combo of seasoning that makes everything tastes better!
HOW TO MAKE THIS SHRIMP FRIED RICE NOODLES RECIPE
Forbered ingredienserne – Whisk the Eggs in a bowl. Cut the veggies. Set aside.
Kog risnudlerne – Steam a wok of water on medium-high heat. When the water starts steaming, add in the dried Vermicelli. Steam for a few minutes until the noodles open up. The noodles should still be firm, not soft. Then drain and transfer to a large bowl.
Forbered risnudlerne – Cover the bowl with a lid and let sit for 10 minutes. After 5 minutes, open the lid and flip the noodles. Then cover and sit for another 5 minutes. Once done, add in the Dark Soy Sauce and mix well. This helps the noodles to get a nice color. Use scissors to cut the noodles to make it shorter if necessary.
Steg rejerne – In a wok, add in 1 tbsp Vegetable Oil, over meidum-high heat. Add in the Shrimp. Fry on both sides until nicely golden. Season with Salt and Pepper. Transfer to a bowl and set aside.
Kog æggene – In the same wok, add in 1 tbsp Vegetable Oil, on medium-high heat. Pour in the Eggs. Stir fry until the Eggs are half cooked. Transfer to a bowl and set aside.
Samle retten – In the same wok, add in 2 tbsp Vegetable Oil, on medium-high heat. Add in the Rice Noodles. Stir fry for 1-2 minutes. Then add in the Eggs and Bean Spouts. Keep stirring. Then add in the Lettuce, Green Onions, and Shrimp. Add in the seasoning sauces: Light Soy Sauce and Oyster Sauce. Combine everything well. Add in Chili Flakes. Cook for another minute or two. Turn off the heat. Add in Black Pepper. Stir well again.
Klar til servering – Transfer to serving plates. Sprinkle more Black Pepper on top as desired. Ready to enjoy!

It is important not to steam the rice noodles too long in the wok. The noodles are supposed to be still firm after steaming in the wok. The resting process in a bowl with the lid will continue to cook the rice noodles. In this way, the rice noodles can maintain the chewy texture when stir-frying.
