My Glossy Vegetarian Japchae (Korean Stir-fry Glass Noodles) can be one of your go-to meals at any time of the day. It features fun springy noodles and colorful vibrant vegetables with a sweet and savory sauce! Compared to the traditional version, this Vegetarian Japchae takes less time and effort to prepare.

This vegetarian style of Korean Stir-fry Glass Noodles is super healthy and packed with rich flavors. If you prefer a meaty version, add some Beef or Pork, or even a few Shrimp. But my vegetarian version uses dried Tofu to produce an incredibly good taste!

Korean Stir Fry Glass Noodels

HOW TO MAKE THIS VEGETARIAN JAPCHAE

1. Prepare the sauce – In a bowl, mix together Sesame Oil, Light Soy Sauce, Brown Sugar, toasted Sesame Seeds, and Black Pepper. Set aside.
2. Cook the Glass Noodles – Boil a pot of Water. Cook the Glass Noodles for 8-10 minutes according to the package instructions. Drain and rinse with cold water for about 30 seconds to stop the cooking. Use a pair of scissors to give the noodles a few cut. Set aside.
3. Cook the Vegetables – In a wok, add in Vegetable Oil, on medium-high heat. Add in Onion and sautรฉ for 2-3 minutes until slightly soften. Then add in Garlic and cook for about a minute. Add in Carrot and Red Bell Pepper. Cook for 3 minutes until they are nicely soft. Then add in the dried Tofu. Cook for another minute or two. Next, add in Shiitake Mushroom and Spinach. Toss well. Cook for 1-2 minutes.
4. Samle retten – Turn the heat down to low. Add in the Glass Noodles, the premade Sauce, and chopped Green Onions. Combine everything well.
5. Klar til servering – Transfer to serving bowls or plates. Garnish with some extra Green Onions, toasted Sesame Seeds, and Chili Flakes. Ready to enjoy!

Hainis tips

For the Spinach, if available, use the real Asian Spinach with big leaves and stems. But this option is sometimes hard to find in Europe and small-town America. You can also substitute Baby Spinach, but be sure to leave the stems attached! Avoid the frozen ones because you want the stiffer texture and look of fresh Spinach for taste and presentation. Feel free to garnish with extra Chili Flakes at the end!

Ingredienser

  • 100 g Korean Sweet Potato Noodles (Glass Noodles )
  • 4 large Shiitake Mushrooms, thinly sliced
  • 50 g Gulerod, finhรฅret
  • 1/2 Red Bell Pepper, thinly sliced
  • 1 small Onion, sliced
  • 3 store Hvidlรธgsfed, finthakket
  • 2 Forรฅrslรธg, hakket
  • 60 g Spinach (with stems)
  • 100 g Dried Tofu, cut in strips
  • 1.5 tbsp Vegetabilsk olie
  • some Chili Flakes to for taste and garnish

The Sauce

  • 1 tbsp Sesamolie
  • 1/2 tbsp ristede Sesamfrรธ
  • 2 tbsp Lys sojasovs
  • 1 1/2 tbsp Brunt sukker
  • 1/4 tsk Sort peber
